Happy Father’s Day to all the dads out there! I’m so blessed to have the best dad in the world and someone I consider one of my best friends. He’s a little wangster who grew up in the hood, but he instilled in us the importance of family, hard work, structure, and loyalty. I hope to one day be even half the dad he is to me and my brothers. I gotta have my pops!

Coconut Oatmeal Chocolate Chip Cookies

Ingredients
1/2 cup + 2 tbsp melted coconut oil (142g)
1 cup light brown sugar (160g)
1 egg
2 tbsp cold water
1 tsp vanilla extract
1 1/2 cups all-purpose flour (170g)
1 1/2 cups old-fashioned oats
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup semisweet chocolate chips (170g)

Instructions
1.Mix the melted coconut oil and brown sugar until combined.
2.Add the egg, water, and vanilla. Mix well.
3.Stir in the flour, oats, baking powder, baking soda, and salt.
4.Fold in the chocolate chips.
5.Chill the dough for 30 minutes.
6.Scoop into large cookie balls and place on a parchment-lined baking sheet.
7.Bake at 375°F for 10–11 minutes.
8.Let cool on the baking sheet for 10 minutes before moving.
