Churro Cookies — Crispy, Cinnamon-Sugar & Irresistible
These Churro Cookies are crispy on the outside, tender in the center, and coated in plenty of cinnamon sugar. They’re shaped like little churro discs, fried until golden, and can be finished with melted chocolate for an extra indulgent touch.

Ingredients
For the Churro Dough
2¼ cups (540 g) water
5½ tablespoons (80 g) salted butter
2 tablespoons (24–26 g) granulated sugar
2⅓ cups (280 g) all-purpose flour
¼ cup (4 tablespoons) cold milk
For the Cinnamon Sugar
1 cup (200 g) caster sugar or granulated sugar
2 teaspoons ground cinnamon
For Frying
Vegetable or canola oil, as needed
Optional for Serving
Melted semisweet or milk chocolate
Dulce de leche
Caramel sauce
Instructions
1. Make the churro dough
In a medium saucepan, combine the water, butter, and sugar.
Heat over medium heat until the butter is completely melted and the mixture just begins to simmer.
2. Add the flour
Remove the pan briefly from the heat and add the flour all at once.
Stir vigorously with a wooden spoon or sturdy spatula until the mixture comes together into a thick dough.
Return the saucepan to low heat and continue stirring for about 1–2 minutes, until the dough pulls away from the sides of the pan.
3. Add the milk
Transfer the dough to a mixing bowl and let it cool for a few minutes.
Add the cold milk gradually and mix until the dough becomes smooth, thick, and pipeable.
4. Pipe the cookies
Transfer the dough to a piping bag fitted with a large star tip.
Line a baking sheet with parchment paper or a silicone baking mat.
Pipe the dough into small spiral discs, leaving a little space between each one.
5. Freeze
Place the tray in the freezer for about 20 minutes, or until the churro discs are firm enough to handle without losing their shape.
6. Prepare the cinnamon sugar
In a shallow bowl, mix the sugar and cinnamon until evenly combined.
Set aside.
7. Fry the churro cookies
Heat the oil to 350°F (180°C).
Carefully fry the frozen churro discs in small batches, without overcrowding the pan.
Cook for about 2–4 minutes per batch, turning as needed, until deeply golden, crisp, and cooked through.
8. Coat in cinnamon sugar
Remove the cookies with a slotted spoon and allow the excess oil to drain briefly.
While still warm, toss them generously in the cinnamon sugar mixture.
9. Serve
Serve warm as they are, or dip them in melted chocolate, dulce de leche, or caramel sauce.
Tip
Make sure the oil stays close to 350°F (180°C). If the oil is too cool, the cookies may absorb too much oil; if it’s too hot, they can brown before the centers are fully cooked.
For the best texture, enjoy them fresh while they are still crisp on the outside and soft inside.
