Bill’s original plan was straightforward. They would buy a property, plant vines to beautify it, and rent it out on Airbnb.

A self-described “tech geek,” he started researching how vineyards operate and realized that if they planted enough vines, they could sell the fruit and potentially break even.

In 2016, they purchased Hollyhock Vineyard, a 10-acre property with Grenache and Mourvèdre vines, cottages, and a 1940s farmhouse.

The fruit was already under contract to Tablas Creek, providing steady income while they focused on the Airbnb business.

Then guests started asking if they could buy wine.

Yet that is exactly what Bill and Julie Lapp are doing in Paso Robles with Mid•Point Winery.

The S.L.V. bottling started it all, and in the decades since, Stag’s Leap Wine Cellars has built an enduring reputation for serious, Bordeaux-style wines.

A visit here is your chance to taste several of them.

The “S.L.V.” designation refers to wines from the vineyard that produced the Cabernet Sauvignon that beat some of France’s most celebrated Bordeaux at the Judgment of Paris.

Then there is the FAY Vineyard. Planted in the early 1960s, it was the first Cabernet Sauvignon vineyard in what would later become the Stags Leap District AVA.

Winiarski purchased it from Nathan Fay in 1986 and named it in his honor.

In 1976, just six years after founding Stag’s Leap Wine Cellars, Warren Winiarski helped change the course of American wine and put Napa Valley firmly on the world stage.

That was the year of the now-legendary Judgment of Paris, a blind tasting in which Stag’s Leap’s 1973 S.L.V. Cabernet Sauvignon outscored a formidable field of French Bordeaux to take first place. Napa’s Chateau Montelena Chardonnay claimed top honors in its category as well, besting a lineup of storied Burgundies.

Wine would never be quite the same.

Although rooted in one of Europe’s oldest wine cultures, contemporary producers employ modern cellar techniques to maximise fruit purity and site expression.

Temperature-controlled fermentation protects aromatic freshness in white wines, while carefully managed extraction and maturation preserve balance in reds. Wines designated Réserve and Grande Réserve are subject to additional ageing requirements before release, reinforcing the PDO’s emphasis on quality and consistency.

Rather than replacing tradition, modern techniques serve to better express the unique characteristics of the region.

Among Greece’s many historic wine regions, few combine ancient viticultural heritage with modern precision as successfully as PDO Handakas–Candia.

Officially established in 2011 within the Regional Unit of Heraklion, the appellation represents an important chapter in the continuing evolution of Cretan wine, preserving indigenous grape varieties while showcasing the remarkable terroir that has supported viticulture on the island for millennia.

Named after the historic Venetian name for Heraklion, Candia, the PDO reflects both the region’s cultural significance and its renewed focus on quality-driven production.

Although Crete has produced wine since the Minoan civilization more than four thousand years ago, today’s producers are demonstrating that the island’s future may be every bit as compelling as its past.
