Whole beef comes in every week. So what that means for you is we have a ton of variety, with of hard to find cuts, organ meats, etc. What that also means, however, is that some of these cuts are in very limited quantities. For example, there’s only one Hanger Steak, two Tri Tips, one Spleen (I know you want that spleen Jeff. Who’s Jeff?)

Paleron Steaks. Have you had them? It’s the second most tender muscle on the animal. Just cut around that bit of gristle in the middle and you’ve got one of the most flavorful most tender bites of beef available.

Sophie has been making some BANGERS lately.
Two new sausages hitting the streets today! Cassoulet and Pozole Verde.
Cassoulet has duck confit, pork belly, confit garlic and onion, thyme, rosemary, bouillon, cannellini beans.
Pozole is made with chicken, serrano, poblano, cilantro, garlic, jalapeño, coriander, cumin and hominy.
