Kicking off with this frothy version by our beverage director,

Taking the classic aperitivo format and adding citrus and egg white, we turned a bitter and boozy beverage into something light and fluffy, while retaining that mouthwatering bitter note. And while we love gin, we just couldn’t resist swapping in some mezcal.

Satur-yay! Our beverage director loves visiting the farmers markets in Los Angeles to take local and seasonal ingredients and turn them into fresh and fun cocktails!

🍊Tip: muddle kumquats with gin to incorporate the sweetness from the skins and the tartness from the juice, then top with your favorite tonic for a simple sipper.

🍓Tip: juicy strawberries love to be paired with lightly smoked mezcal and a pinch of salt for a margarita riff.

🌸Tip: edible flowers can make a gorgeous garnish, whether used fresh or dried. Just be sure the flowers you eat and drink are organic and pesticide free.

We are thrilled to announce the start of a very fun project with ! We will be designing a fresh take on the beverage program of this So Cal restaurant group, incorporating fresh seasonal ingredients that can already be found in their breakfast, lunch and dinner menus, and gathering an incredible selection of California wines and locally made beer. With six locations, our team is diving in to create the perfect program to please their guests who have been enjoying meals at Marmalade for over 20 years! We can’t wait to show you what we will do!

Over the next month we will collect data, look at the numbers, develop cocktail recipes and training manuals, design menus, set up lots of tastings 😉 and much much more. Our work is cut out for us and we are so excited!!

Incorporating fresh herbs that are found in Italian and Mexican cuisines (hello basil, cilantro, parsley and mint!) along with apple cider vinegar and olive oil (trust us on this!), “The Recitation” evokes the same green tones and thoughtful composition seen in Thomas Dewing’s 1891 oil painting by the same name.
