Thai Inspired Pasta Salad 🌱 Follow .door for more! Full recipe below by

Ingredients:
Veggies:

10 oz chickpea pasta
1 chopped bell pepper
1 cup chopped cucumber
1/2 cup shredded carrots
1/3 cup green onions, diced
1 cup chopped cabbage

Sauce:
1/2 cup peanut butter
1 tbsp maple syrup
1 tsp apple cider vinegar
1 tbsp coconut aminos or soy sauce
1/4 cup water
Instructions:
Cook the noodles according to package instructions. Rinse and let cool.
While the pasta cooks/cools, chop your veggies
you’ll also want to make the sauce here.
In a small bowl, combine the sauce ingredients and whisk together until smooth
When the pasta is done cooling, add to a bowl also with the chopped veggies. Then add the sauce on top and toss together. This makes about 6 servings! Enjoy

✨ INGREDIENTS✨

🌱 1 cup uncooked quinoa
🌱 2 cups water
🌱 1 tbsp turmeric
🌱 pinch of pepper

🌱 I added salt, garlic powder & Italian seasoning but this is optional|

✨ INSTRUCTIONS✨

🌱 Combine quinoa and water in a blender and rest 30 min- 1 h
🌱 Add turmeric & pepper and whatever else you choose to add and blend
🌱 Scoop out about 2/3 cup of the batter into a non- stick pan warmed up to medium/ high heat (depending on the pan u might want to grease with a bit coconut oil)
🌱 Each side takes about few minutes 🙌🏻|

Tips:

1. The pan needs to be non- stick.
2. Make sure your pan is heated before pouring
3. These will not stick unless you don’t have non- stick pan or haven’t followed instructions

Ingredients
- 1/2 organic iceberg lettuce
- 1 organic cucumber
- 4 spring onions
- 200g drained cooked chickpeas (from a can)
- 1 clove of garlic
- 2 handfuls of basil
- 1 handful of parsley (flat leaved or curly)
- 1 handful of chives
- 1/4 cup olive oil
- 1/2 cup cold water
- Juice of 1 lemon
- Salt
- To serve: tortilla chips for a cosy apero or veggie balls for a balanced lunch or meal.

Method
- chop the lettuce, cucumber and spring onions to small bits
- blend the rest of the ingredients together until smooth.
- Mix it all together and eat with tortilla chips or veggie balls.

Ingredients
* 100g (3/4 us cup) sweet potato, cooked
* 1 small ripe banana (approx 70g without peel)
* 100g (1 1/4 cup) oat
* 1 tablespoon peanut butter
* Handful of chocolate chips (avoid for younger babies)

Method
1. Preheat oven to 200°C (400 degrees °F)
2. Mash banana and sweet potato in a bowl then add all the rest of the ingredients and mix until combined.
3. Roll into balls and place e on a baking sheet.
4. Slightly press each ball down to form the cookies.
5. Bake for 12-15 minutes until cookies become slightly golden brown.
6. Remove from oven and let them cool before serving.
7. Buon appetito!

Harissa lemon carrots 🥕 Follow for more! Full recipe below by

This is the perfect summer side dish. The harissa and lemon pair so well together. Yum.
INGREDIENTS

3 large carrots - cut into ½ inch thick pieces
1 tablespoon harissa
½ tablespoon oil
½ tablespoon maple syrup
juice from ½ lemon
½ teaspoon salt
½ teaspoon paprika
½ teaspoon garlic powder
black pepper to taste
+2 tablespoons fresh chopped dill for topping (optional)

INSTRUCTIONS

Preheat oven to 425 degrees.
Add carrots to a bowl and toss with the other ingredients listed.
Add carrots to a sheet pan lined with parchment paper. Bake for 30-35 minutes, until cooked through.
Top carrots with dill if using. Serve carrots with your favorite protein and enjoy.

Ingredients:⁠

For Pickled Cucumber⁠
- 1 Persian cucumber, peeled into ribbons then cut into ⅓ length ⁠
- 2 tbsp sushi vinegar ⁠

For Pickled Radishes⁠
- 2 radishes, thinly sliced⁠
- 1 tbsp plum vinegar (or sub w/ rice vinegar & a pinch of salt)⁠
- 1 tbsp rice vinegar ⁠
- 1 tsp maple syrup ⁠

For Sushi Rice⁠
- 2 cups cooked rice⁠
- ¼ cup sushi vinegar⁠

For assembly⁠
- Extra-virgin olive oil spray, for greasing⁠
- 1½ nori sheets, cut 1 nori sheet into 4 squares & ½ nori sheet into 2 squares⁠
- ½ avocado, thinly sliced⁠
- 1 tbsp of finely chopped chives⁠
- 1 tsp toasted white sesame seeds⁠
- 1 tsp toasted black sesame seeds⁠
- Tamari, for serving⁠

Instructions:⁠

1. Cook rice per directions on the package.⁠
2. To make pickled cucumber: In a small bowl, toss cucumber and sushi vinegar. Set aside.⁠
3. To make pickled radish: In a small bowl, toss radishes, plum vinegar, rice vinegar, and maple syrup. Set aside.⁠
4. To make sushi rice: in a medium bowl, combine cooked rice and sushi vinegar.⁠
5. Spray oil into a donut pan to grease. Spread rice into the pan and gently press to form the shape of the donut. Flip the pan to transfer sushi donuts to a clean work surface. Place each donut onto a piece of the nori sheet and garnish with pickled cucumber, pickled radish, avocado, chives, and sesame seeds. Serve with soy sauce.

2 cups fresh basil
1/4 cup sun flower seeds
1/2 cup olive oil
2 tbs nutritional yeast
1 tbs lemon juice
2 garlic cloves

Put all the ingredients in a blender and blend away!
