Directions:
1️⃣ Make the Crêpes:
In a blender, combine flour, sugar, salt, eggs, milk, melted butter, and vanilla. Blend until smooth. Let batter rest for 30 minutes. Heat a nonstick skillet over medium heat and lightly grease. Pour about ¼ cup batter into pan, swirling to coat. Cook for 1–2 minutes per side until golden. Repeat until you have 15–18 crêpes. Let cool.

2️⃣ Prepare the Strawberry Cream:
Whip heavy cream and powdered sugar until soft peaks form. In another bowl, beat mascarpone or cream cheese until smooth. Gently fold whipped cream and vanilla into the cheese until combined, then fold in chopped strawberries.

3️⃣ Make the Crumble:
Preheat oven to 350°F (175°C). Combine flour, brown sugar, salt, and cold butter in a bowl. Rub together until crumbly. Spread on a baking sheet and bake for 8–10 minutes until golden and crisp. Let cool.

4️⃣ Assemble the Cake:
Place one crêpe on a serving plate. Spread a thin layer of strawberry cream. Repeat layering until all crêpes are used. Top the final layer with more cream and a generous sprinkle of crumble topping.

5️⃣ Chill and Serve:
Refrigerate for at least 1 hour before slicing to set layers. Garnish with extra strawberries and crumble if desired.

Tips:
• Use a ring mold during layering for a cleaner shape.
• You can blend some strawberry jam into the cream for a more intense flavor.
