Something new from the barrels: our Barrel Aged Aquavit. Caraway and dill meet warm oak, with notes of vanilla, spice, and a subtle sweetness that only time in wood can bring. It’s bold, complex, and unlike anything else on your back bar.

This is a small, limited run, available exclusively on our website while it lasts.

R&D. Research and Development. Really, it’s just me following an idea to resolution. There is always something in the works around here. I’ve been working on this latest project off and on for the past year. I’m really excited with the progress and flavor development. Looking forward to sharing these new spirits.

What would you name this cocktail?

1.5oz of Dead of Night Absinthe Verte5oz dead of Night Aquavit 5oz pineapple juice (if possible, reduce by 1/2 to keep pineapple flavor strong without the extra dilution) 3/4oz if not reduced 25oz lime juice25oz coffee liqueur

Garnished with a pineapple, egg white foam and coffee grounds

First we have our Gin bundle. It comes with bottle of first ever release, Eastsider Gin and a bottle of our latest release, Sloe Gin.

We use our Eastsider gin as our base for our sloe gin. The cirtrus and floral notes in Eastsider complement the tart, fruit forward notes in our sloe gin.

Our second bundle is our last three releases dating back to last year.

Our Sloe Gin is crafted by macerating traditional English sloe berries and tart California blueberries in our gin for three months.

The result is a deeply rich spirit with notes of blue and black berry aromas. It strikes a perfect balance between the sweet and tart flavors of the fruit, complexity from the gin botanicals and a bright berry and citrus finish. A delicious blend of English tradition and California sun.

the line of variable rums all deviate from baseline because they have one variable changed. very literal, i know.

the dunderclap expression has 33% dunder added into the fermentation in place of some water. everything else was kept as constant as possible from baseline. it’s fermented from 100% baking grade molasses for 17-23 days using the distiller’s yeast strain of saccharomyces cerevisiae. it’s then double pot distilled to a spirit strength of 75% abv. this is an extremely small batch, yielding only 14.5 gal of rum.

there are only 68 bottles of dunderclap (49% abv) and 48 bottles of dunderclap at still strength (75% abv) available! if you liked baseline, you’re going to love dunderclap! click the link in my bio for more info and to get your bottles!
