1 hour prep & cook 😄
Perfect as an appetizer or side
•1 large eggplant, cut into 1/2 inch wheels (dice ends & set aside)
•brush with mix of olive oil, salt, & pepper (3tbsp oil, 1tsp salt, 1tsp pepper)
•place on parchment paper & bake in preheated oven at 400F for 25mins
•while that bakes, dice 1 zucchini & 3 mini peppers, mince 3 cloves garlic, add diced eggplant, coat with 1 tbsp olive oil, salt & pepper mix
•sauté in pan on medium heat for 5 mins
•in a bowl, mash up 16oz of extra firm tofu, add 16oz of pasta sauce
•take out baked eggplant
•layer tofu mixture, a 2nd eggplant wheel, 1tbsp pasta sauce, sautéed veg
•top with vegan cheese and/or vegan parmesan
•place back in oven and broil for 5 minutes

1/2 cup blueberries
1/2 cup water
1/3 cup brown sugar
1/4 tsp sea salt
Pinch to 1/8 tsp cardamom
All in pan, medium heat til gently bubbling.
