2 lbs beef stew meat, cut into chunks

4 medium potatoes, peeled and cubed

4 carrots, sliced

1 onion, chopped

3 garlic cloves, minced

3 cups beef broth (low sodium)

2 tbsp tomato paste

1 tsp dried thyme

1 tsp dried rosemary

2 tbsp flour

2 tbsp olive oil

Salt and pepper to taste

Preheat (optional): If you want extra flavor, heat olive oil in a skillet over medium heat and brown the beef chunks for 2–3 minutes per side. This step adds flavor but can be skipped if you're short on time.

Prepare the slow cooker: Add potatoes, carrots, onion, and garlic to the bottom of the slow cooker.

Layer the beef: Place browned (or raw) beef on top of the veggies.

Mix the broth: In a bowl, whisk together beef broth, tomato paste, flour, thyme, rosemary, salt, and pepper until smooth. Pour over the meat and vegetables.
