Ingredients:
- 2 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp cocoa powder
- 1 1/2 cups vegetable oil
- 1 cup buttermilk, room temperature
- 2 large eggs, room temperature
- 2 tbsp red food coloring
- 1 tsp vanilla extract
- 1 tsp white vinegar
- 16 oz (2 blocks) cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 tsp vanilla extract (for frosting)
- 2 cups fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar (for filling)
- 1 tbsp lemon juice (for filling)
- Fresh strawberries (for garnish)
- Red velvet cake crumbs (for garnish)
Directions:
1. First things first, preheat your oven to 350°F (175°C). Get those two 9-inch round cake pans ready by greasing and flouring them, and don’t forget to line the bottoms with parchment paper!
2. In a medium bowl, whisk together the flour, sugar, baking soda, salt, and cocoa powder. In another large mixing bowl, combine the vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and white vinegar. Stir until everything is well mixed. Gradually fold the dry ingredients into the wet ingredients, mixing until you have a smooth batter.
3. Divide this luscious batter evenly between your prepared cake pans and pop them in the oven for 25-30 minutes. When they’re done, let them cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.
4. While the cakes are cooling, let’s whip up that strawberry filling! In a saucepan, mix the sliced strawberries, granulated sugar, and lemon juice, cooking over medium heat until everything thickens up nicely—this should take about 10-15 minutes. Once thickened, set it aside to cool completely.
