Classic Meatloaf with Mashed Potatoes and Gravy
Ingredients:
For the Meatloaf:
1 1/2 pounds ground beef
1/2 pound ground pork
1 onion, finely chopped
2 cloves garlic, minced
1 cup breadcrumbs
1/2 cup milk
1/4 cup ketchup
2 tablespoons Worcestershire sauce
2 large eggs, beaten
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon fresh parsley, chopped plus extra for garnish
1 tablespoon olive oil
For the Mashed Potatoes:
4 large russet potatoes, peeled and cubed
1/2 cup milk (more if needed)
1/4 cup unsalted butter
Salt and pepper to taste
Fresh parsley, chopped for garnish
For the Gravy:
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 cup beef broth
Salt and pepper to taste
1 tablespoon Worcestershire sauce
Directions:
Prepare the Meatloaf: Preheat your oven to 375F (190C) and grease a loaf pan or line it with parchment paper.
In a large bowl, mix together the ground beef, ground pork, onion, garlic, breadcrumbs, milk, ketchup, Worcestershire sauce, eggs, salt, pepper, and parsley until well combined.
Shape the mixture into a loaf and place it in the prepared pan. Brush the top with olive oil.
Bake for 60-75 minutes until cooked through and reaches an internal temperature of 160F (70C). Let it rest for 10 minutes before slicing.
Prepare the Mashed Potatoes: While the meatloaf is baking, cook the cubed potatoes in a pot of boiling water with a pinch of salt until tender, about 15-20 minutes.
Drain the potatoes and return them to the pot. Add milk and butter, mash until smooth, adjusting consistency with more milk if needed.
Season with salt and pepper to taste and keep warm.
Prepare the Gravy: In a saucepan, melt butter over medium heat, stir in flour and cook until golden brown.
Gradually whisk in beef broth until smooth, then cook until thickened, about 5-7 minutes.
Stir in Worcestershire sauce, season with salt and pepper, and keep warm.
Serve: Plate mashed potatoes in the center of each plate, add a slice of meatloaf next to the potatoes.
Pour gravy over the meatloaf and potatoes, garnish with parsley.
Serve immediately.
