Fall-Off-the-Bone Oven-Baked Ribs

Ingredients:
Ribs (as needed)
3/8 cup (95 ml) ketchup
1/3 cup (85 ml) BBQ sauce
3 tbsp chili powder
3/4 cup (190 ml) maple syrup
4 tbsp HP sauce
1/2 tsp paprika
Salt and pepper, to taste

Directions:
Boil the ribs for about 1 hour until tender.
Preheat the oven to 300°F (150°C).
In a bowl, whisk together ketchup, BBQ sauce, chili powder, maple syrup, HP sauce, paprika, salt, and pepper.
Brush the sauce generously over the ribs.
Place ribs in a baking dish and bake for 40 minutes per side, brushing with more sauce halfway through.
Serve hot and enjoy the tender, sticky ribs.

Classic Meatloaf with Mashed Potatoes and Gravy

Ingredients:
For the Meatloaf:
1 1/2 pounds ground beef
1/2 pound ground pork
1 onion, finely chopped
2 cloves garlic, minced
1 cup breadcrumbs
1/2 cup milk
1/4 cup ketchup
2 tablespoons Worcestershire sauce
2 large eggs, beaten
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon fresh parsley, chopped plus extra for garnish
1 tablespoon olive oil
For the Mashed Potatoes:
4 large russet potatoes, peeled and cubed
1/2 cup milk (more if needed)
1/4 cup unsalted butter
Salt and pepper to taste
Fresh parsley, chopped for garnish
For the Gravy:
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 cup beef broth
Salt and pepper to taste
1 tablespoon Worcestershire sauce

Directions:
Prepare the Meatloaf: Preheat your oven to 375F (190C) and grease a loaf pan or line it with parchment paper.
In a large bowl, mix together the ground beef, ground pork, onion, garlic, breadcrumbs, milk, ketchup, Worcestershire sauce, eggs, salt, pepper, and parsley until well combined.
Shape the mixture into a loaf and place it in the prepared pan. Brush the top with olive oil.
Bake for 60-75 minutes until cooked through and reaches an internal temperature of 160F (70C). Let it rest for 10 minutes before slicing.
Prepare the Mashed Potatoes: While the meatloaf is baking, cook the cubed potatoes in a pot of boiling water with a pinch of salt until tender, about 15-20 minutes.
Drain the potatoes and return them to the pot. Add milk and butter, mash until smooth, adjusting consistency with more milk if needed.
Season with salt and pepper to taste and keep warm.
Prepare the Gravy: In a saucepan, melt butter over medium heat, stir in flour and cook until golden brown.
Gradually whisk in beef broth until smooth, then cook until thickened, about 5-7 minutes.
Stir in Worcestershire sauce, season with salt and pepper, and keep warm.
Serve: Plate mashed potatoes in the center of each plate, add a slice of meatloaf next to the potatoes.
Pour gravy over the meatloaf and potatoes, garnish with parsley.
Serve immediately.

Lemon Butter Salmon & Shrimp with Garlic Mashed Potatoes & Sautéed Green Beans
A rich and comforting seafood dinner, this dish features juicy lemon-butter glazed salmon and shrimp, creamy garlic mashed potatoes, and perfectly sautéed green beans. It's indulgent yet fresh ideal for a cozy dinner or special occasion.

𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:

For the Lemon Butter Salmon & Shrimp:

1 salmon fillet (~6 oz)

6–8 large shrimp, peeled & deveined

2 tbsp butter

1 tbsp olive oil

2 garlic cloves, minced

1 lemon, thinly sliced (plus extra for juice)

1 tbsp chopped parsley

Salt & black pepper, to taste

1/2 tsp paprika (optional for color)

Garlic Mashed Potatoes:

2 large russet or red potatoes, peeled and diced

2 tbsp butter

1/4 cup heavy cream or milk

2 cloves garlic, minced

Salt & pepper, to taste

Optional: chopped parsley or chives for garnish

Sautéed Green Beans:

1 cup fresh green beans, trimmed

1 tbsp olive oil or butter

1 garlic clove, minced

Salt & pepper, to taste

𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:

Prep the Potatoes:
Boil diced potatoes in salted water for about 15–20 minutes until fork-tender. Drain and mash with butter, garlic, cream, salt, and pepper. Set aside and keep warm.

Cook the Green Beans:
In a skillet, heat oil or butter over medium heat. Add green beans and sauté for 5–7 minutes until crisp-tender. Add garlic in the last 2 minutes. Season to taste.

Sear the Salmon:
Season salmon with salt, pepper, and paprika. Heat olive oil in a skillet over medium-high heat. Add salmon skin-side down and sear 4–5 minutes. Flip and cook another 3–4 minutes. Remove and set aside.

Cook the Shrimp & Sauce:
In the same pan, melt butter and add garlic and lemon slices. Sauté for 1–2 minutes. Add shrimp and cook for 2–3 minutes per side until pink and cooked through. Squeeze in fresh lemon juice and sprinkle with parsley.

Assemble & Serve:
Plate mashed potatoes with shrimp draped on top, salmon with lemon slices, and green beans on the side. Drizzle remaining lemon butter sauce over everything. Garnish with fresh herbs.

Ingredients:

2 lbs small red or Yukon gold potatoes, halved or quartered

1 packet Lipton Onion Soup Mix

1/4 cup olive oil

1/4 cup unsalted butter, melted

2 cloves garlic, minced

1/2 tsp black pepper

1/2 tsp paprika (optional for color)

Fresh parsley, chopped for garnish (optional)

Directions:

Prepare the Potatoes:

Wash and cut the potatoes in half or quarters, depending on their size. The pieces should be uniform for even cooking.

Season the Potatoes:

In a large bowl, combine the halved potatoes, Lipton Onion Soup Mix, olive oil, melted butter, minced garlic, black pepper, and paprika (if using). Toss until the potatoes are well-coated with the seasoning mix.

Set Up the Slow Cooker:

Lightly grease the inside of your slow cooker with cooking spray or olive oil to prevent sticking.

Add the seasoned potatoes to the slow cooker, spreading them out evenly.

Cook the Potatoes:

Cover and cook on low heat for 4-5 hours, or on high heat for 2-3 hours, until the potatoes are tender. Stir once or twice during cooking to ensure even seasoning and prevent sticking.

Finish and Serve:

Once the potatoes are tender, stir them gently to distribute the flavors.

Garnish with fresh chopped parsley before serving for a pop of color and freshness.

Ingredients:

8 mozzarella cheese sticks, cut into thirds

24 slices of bacon

1/2 cup all-purpose flour

2 large eggs, beaten

1 cup panko breadcrumbs

1 tsp garlic powder

1 tsp smoked paprika

1/2 tsp black pepper

Vegetable oil, for frying

Marinara or ranch, for dipping

Instructions:

1. Prepare the Mozzarella Cheese Pieces:

Cut mozzarella sticks into thirds to create bite-sized cheese pieces.

Wrap each piece of cheese tightly with a slice of bacon, ensuring the ends overlap. Secure with a toothpick if needed.

2. Set Up the Coating Stations:

Place the flour in one shallow bowl.

In a second bowl, beat the eggs until smooth.

Combine panko breadcrumbs, garlic powder, smoked paprika, and black pepper in a third bowl.

3. Coat the Bacon Bombs:

Roll each bacon-wrapped cheese piece in the flour, ensuring it’s fully coated.

Dip it into the beaten eggs.

Roll in the breadcrumb mixture, pressing gently to adhere the coating.

4. Fry the Bombs:

Heat about 2 inches of vegetable oil in a deep skillet or pot to 350°F (175°C).

Fry the bacon bombs in small batches until golden brown and crispy, about 2–3 minutes.

Coffee and Bourbon Braised Short Ribs
This recipe takes a look through the lens of Afrofuturism. Rich flavors of beef slow cooked with notes of espresso coffee and bourbon joined by stewed collard greens and golden grits.

Equipment
1 Cast Iron Skillet

Ingredients
2 pounds Beef Short Ribs
1 tablespoon extra-virgin olive oil, high quality (or vegetable oil – see notes)
3 tablespoons light brown sugar
2 tablespoons Bourbon Uncle Nearest
1 clove Elephant Garlic, peeled and diced
1 tablespoon sea salt
1 teaspoon onion powder
1 teaspoon garlic powder
½ stick unsalted butter (4 ounces)
2 teaspoons cracked black pepper
1/3 cup coffee beans, dark roast, ground to brew cold brew coffee (for short ribs rub)
1½ cups cold brew coffee, dark roast to braise short ribs in the oven

Instructions
Pre-Prep for Short Ribs
Add ground coffee, brown sugar, sea salt, onion powder, garlic powder and black pepper to food processor and pulse until all dry seasoning has blended together. Feel free to adjust seasonings to your taste palate.
Season short ribs with coffee seasoning blend, cover with plastic wrap and refrigerate for 6 hours. Remove from refrigeration 30 min before preparing.

Instructions for Cooking
Preheat oven to 375 F degrees.
Preheat cast iron skillet to medium-high heat on stove-top.
Lightly oil skillet with vegetable oil, and place ribs, bone side up. Get a good and quick sear and turn to next side until all sides have locked in the internal flavoring.
Next add ½ stick of unsalted butter, Bourbon, elephant garlic, ½ cup of cold brewed coffee into skillet.
Cover skillet with aluminum foil then place into preheated oven and braise for 30 minutes.

Next, reduce oven temperature to 350°F degrees.
Use a spoon or ladle to braise beef with juices and continue cooking for another 30 minutes. Use a meat thermometer (inserted at the thickest section) until internal temperature reaches 130° for medium-rare (cook additional 1 hour longer if you're seeking more doneness).

Once ribs are cooked to your likeness, remove from skillet and allow the meat to rest. Do not cut, poke or prod for 10 minutes. This gives the meat time to settle and you'll enjoy the flavors that settle.
While the ribs are resting, deglaze skillet with butter and 1 (one) cup of cold brew coffee. When you're ready to plate, drizzle over short ribs.
Serve and enjoy!

Notes
Bourbon of Choice – Uncle Nearest Premium Whiskey
You can use olive oil, but it a flammable oil if heated to a certain threshold. Use with caution. I would recommend using Grapeseed oil, Canola, or Vegetable oil if you feel more comfortable. You only need a little amount. However, we made this recipe using a high quality, olive oil.

Ingredients
• 1 kg chicken wings (cut into flats and drumettes)
• 2 tbsp vegetable oil
• 1 tsp salt
• 1 tsp garlic powder
• 1 tsp paprika
• ½ tsp black pepper
• ½ tsp onion powder
• ½ tsp baking powder (for extra crispiness)

Optional Glaze (for saucy wings):
• 2 tbsp honey
• 1 tbsp soy sauce
• 1 tbsp hot sauce or ketchup
• 1 tbsp melted butter

Instructions

Pat the chicken wings dry thoroughly with paper towels — removing moisture helps them crisp up.

In a large bowl, combine baking powder, salt, garlic powder, paprika, black pepper, and onion powder. Add wings and drizzle with oil. Toss until evenly coated.

Preheat your oven to 200°C (400°F). Line a baking tray with foil and place a wire rack on top. Arrange wings in a single layer (do not overcrowd).

For the Sweet Potato Filling:

4 cups mashed sweet potatoes (about 4 large sweet potatoes)

½ cup granulated sugar

2 large eggs, beaten

½ cup melted butter

½ cup milk or heavy cream

1 teaspoon vanilla extract

½ teaspoon salt

For the Pecan Topping:

½ cup packed brown sugar

⅓ cup all-purpose flour

⅓ cup melted butter

1 cup chopped pecans

Instructions:

Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.

Peel and boil the sweet potatoes until fork-tender, about 15–20 minutes. Drain well, then mash until smooth.

In a large bowl, combine the mashed sweet potatoes, sugar, beaten eggs, melted butter, milk, vanilla, and salt. Mix until creamy and well blended.

Pour the sweet potato mixture into the prepared baking dish and smooth out the top.

In a separate bowl, mix together the brown sugar, flour, melted butter, and chopped pecans until crumbly.
