Use a ripe cherry tomato or an heirloom variety from the farmers market — this method works, but grocery store hybrids can give you unpredictable results.

The tomato slice technique is one of the most satisfying things a beginning gardener can try. You skip seed extraction entirely: just lay slices directly on moist potting mix, barely cover with a thin layer of soil, keep warm and lightly moist, and seedlings appear in 7 to 14 days. From there it's a normal tomato grow-out.

🍅 A few things that make the difference:
- Use open-pollinated or heirloom tomatoes for plants that match the parent fruit
- One medium-sized tomato contains plenty of seeds — one or two slices per pot is enough
- Thin seedlings once they reach 2 inches tall, keeping only the strongest 2 to 3
- Transplant to larger containers or garden beds once nighttime temps stay above 50°F
- Cherry tomato types are the most forgiving for container growing through the whole season

1 lb large scallops, patted dry
4 tbsp butter, melted
3 cloves garlic, minced
1/4 cup breadcrumbs
1/4 cup Parmesan cheese, grated
1 tbsp fresh parsley, chopped
1 tbsp lemon juice
Salt and pepper to taste
Lemon wedges (for serving)
Instructions:
Preheat the Oven:
Preheat your oven to 400°F (200°C).
Prepare the Garlic Butter:
In a small bowl, mix the melted butter, minced garlic, lemon juice, salt, and pepper.
Assemble the Scallops:
Place the scallops in a single layer in a baking dish.

Make your own flavorful beef jerky at home!
It’s savory, chewy, and packed with bold seasoning. Perfect for snacks, road trips, or protein on the go.

Homemade Beef Jerky

Best Meat Cuts

Use lean cuts so it dries well.

Good options:
• Top round
• Bottom round
• Eye of round
• Flank steak
• Sirloin tip

Fat can spoil jerky, so trim as much as possible.

Ingredients

2 lbs lean beef
1/2 cup soy sauce
1/4 cup Worcestershire sauce
1 tbsp brown sugar
1 tsp onion powder
1 tsp garlic powder
1 tsp black pepper
1 tsp red pepper flakes
1 tsp smoked paprika
1/2 tsp curing salt

1️⃣ Slice the Beef
1. Freeze meat 30–45 minutes (makes slicing easier).
2. Slice ⅛–¼ inch thin strips.
3. Cut with the grain for chewy jerky or against the grain for softer jerky.

2️⃣ Marinate
1. Mix all marinade ingredients.
2. Toss beef strips in the marinade.
3. Cover and refrigerate 8–24 hours.

3️⃣ Dry the Jerky

Oven Method
1. Preheat oven to 170°F (75°C).
2. Place strips on wire rack over baking sheet.
3. Bake 3–5 hours, turning once.

Dehydrator Method
1. Set dehydrator to 160°F (70°C).
2. Dry 4–6 hours until firm but flexible.

*For the Grilled Pineapple Pear Salsa:
- 1 cup fresh pineapple, diced
- 1 ripe pear, diced
- ¼ cup red onion, finely chopped
- 1 jalapeño pepper, finely chopped (seeds removed for less heat)
- 2 tbsp fresh cilantro, chopped
- Juice of 1 lime
- 1 tbsp honey

*For Serving:
- 8 small flour or corn tortillas

**Directions:
1. Marinate the Chicken:
- In a bowl, mix teriyaki sauce, sesame oil, minced garlic, salt, and pepper.
- Add the chicken breasts and coat well. Let marinate for at least 30 minutes (or overnight for more flavor).

2. Grill the Chicken:
- Preheat a grill or stovetop pan over medium heat.
- Cook the chicken for 5-7 minutes per side, or until fully cooked and internal temperature reaches 165°F (75°C).
- Let the chicken rest for a few minutes before slicing into thin strips.

3. Make the Grilled Pineapple Pear Salsa:
- Heat a grill or grill pan over medium-high heat.
- Grill the diced pineapple and pear for 2-3 minutes until slightly charred.
- Remove from heat and let cool slightly.
- In a bowl, mix the grilled pineapple and pear with red onion, jalapeño, cilantro, lime juice, and honey. Stir to combine.
