Oatmeal, Apple, and Carrot Bake (No Sugar, No Flour)
Yields: 6-8 servings
Prep time: 20 minutes
Cook time: 45-50 minutes
Ingredients:
200g (approximately 2 cups) rolled oats (not instant)
1 teaspoon baking powder
240ml (1 cup) milk (dairy or non-dairy, as preferred)
1 medium carrot, grated
6-7 dried apricots, chopped
2-3 tablespoons raisins
Hot water (for soaking dried fruit)
1 medium apple, grated or finely chopped
Cinnamon (optional, to taste)
3 large eggs
A pinch of salt
2 tablespoons sweetener (stevia, erythritol, monk fruit, etc.)
1 teaspoon vanilla extract
1-2 tablespoons olive oil (or coconut oil), for greasing the pan
Instructions:
Prepare Dried Fruit:
Place the chopped dried apricots and raisins in a small bowl.
Pour hot water over them to cover.
Let them soak for about 10 minutes to soften. Then drain very well.
Preheat Oven and Prepare Pan:
Preheat oven to 180Β°C (360Β°F).
Grease a baking dish (approximately 8x8 or 9x9 inches) with olive oil or coconut oil.
Combine Dry Ingredients:
In a large bowl, combine the rolled oats, baking powder, cinnamon (if using), and salt.
Combine Wet Ingredients:
In a separate bowl, whisk together the milk, eggs, sweetener, and vanilla extract.
Combine Wet and Dry:
Pour the wet ingredients into the dry ingredients and mix well.
Add the grated carrot, grated or chopped apple, and soaked dried fruit.
Stir until everything is evenly combined.
Bake:
Pour the mixture into the prepared baking dish.
Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Serve:
Let the bake cool slightly before serving.
Tips and Variations:
Soaking Oats: For a softer texture, you can soak the oats in the milk for 10-15 minutes before adding the other ingredients.
Spice it Up: Add a pinch of nutmeg, ginger, or cloves to the dry ingredients.
Nuts and Seeds: Add chopped nuts (walnuts, pecans, almonds) or seeds (pumpkin seeds, sunflower seeds) for added texture and nutrients.
Fruit Variations: You can use other dried fruits like dates or cranberries.
Sweetness Adjustment: Adjust the amount of sweetener to your preference.
Storage: Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
