- 50 g unsalted butter, melted
- 200 g dark chocolate chips
- 150 g unsalted butter, cubed
- 150 g granulated sugar
- 75 g brown sugar
- 3 large eggs
- 1 tsp vanilla extract
- 90 g all-purpose flour
- 30 g cocoa powder
- 1/2 tsp salt
- 150 g mini marshmallows
Directions
1. Preheat your oven to 180°C (350°F) and line an 8-inch square baking pan with parchment paper.
2. In a bowl, mix the graham cracker crumbs with melted butter until well combined. Press the mixture into the bottom of the prepared pan to form a crust.
3. In a heatproof bowl over simmering water, melt the dark chocolate chips and cubed butter together until smooth. Remove from heat and let cool slightly.
4. In a separate bowl, whisk together granulated sugar, brown sugar, eggs, and vanilla extract until combined. Gradually add the melted chocolate mixture to the egg mixture, stirring continuously.
5. Sift in the flour, cocoa powder, and salt. Fold gently until just combined.
6. Pour the brownie batter over the graham cracker crust and spread evenly.
7. Bake in the preheated oven for 25-30 minutes, or until the top is set and a toothpick inserted into the center comes out with a few moist crumbs.
8. Remove the pan from the oven and immediately scatter the mini marshmallows over the top.
9. Turn on the oven's broiler and place the pan back in the oven for 1-2 minutes, watching carefully, until the marshmallows are golden brown.
10. Let cool in the pan on a wire rack before cutting into squares and serving.
