This hearty Louisiana-style gumbo combines tender chicken, juicy shrimp, smoky beef sausage, and fresh vegetables in a deeply seasoned, savory broth served over fluffy white rice!
🛒 Ingredients:
For the Gumbo:
- 1 pound large shrimp, peeled and deveined
- 1½ pounds boneless, skinless chicken thighs or breasts
- 12 ounces smoked beef sausage, sliced into rounds
- ½ cup vegetable oil
- ½ cup all-purpose flour
- 1 large onion, diced
- 1 green bell pepper, diced
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1½ cups sliced okra, fresh or frozen
- 6 cups chicken broth
- 1 tablespoon Cajun seasoning
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- ½ teaspoon cayenne pepper (adjust to taste)
- 2 bay leaves
- 1 teaspoon black pepper
- Salt to taste
- 1 tablespoon alcohol-free Worcestershire sauce
- 2 tablespoons chopped fresh parsley
- 2 green onions, sliced
For Serving:
- 3 cups cooked white rice
- Extra chopped green onions
- Hot sauce (optional)
👩🍳 Directions:
1\. Heat a large, heavy-bottomed pot over medium heat. Add the vegetable oil and flour, stirring constantly for 20–30 minutes until the roux develops a deep chocolate-brown color. Be careful not to burn it, as this creates the rich, signature gumbo flavor.
2\. Add the diced onion, green bell pepper, and celery directly to the roux. Cook for 5–7 minutes, stirring frequently, until the vegetables begin to soften. Add the minced garlic and cook for another minute until fragrant.
3\. Gradually pour in the chicken broth while stirring continuously to create a smooth, rich base. Add Cajun seasoning, smoked paprika, thyme, oregano, cayenne pepper, bay leaves, black pepper, and Worcestershire sauce.
4\. Add the chicken and sliced smoked beef sausage to the pot. Bring to a gentle boil, then reduce the heat and simmer uncovered for 35–40 minutes, until the chicken is tender and fully cooked.
5\. Remove the chicken, shred it into bite-sized pieces using two forks, and return it to the pot. Stir in the sliced okra and continue simmering for 15–20 minutes until the gumbo thickens slightly and the flavors blend together.
6\. Add the peeled shrimp and cook for another 4–6 minutes, just until they turn pink and opaque. Avoid overcooking to keep them tender and juicy.
7\. Remove the bay leaves. Stir in the fresh parsley and green onions, then taste and adjust the salt and Cajun seasoning as needed.
8\. Spoon warm, fluffy white rice into serving bowls and ladle the hot gumbo generously over the top, making sure every serving gets plenty of chicken, shrimp, sausage, and vegetables.
9\. Garnish with extra green onions and serve hot with your favorite hot sauce for an authentic Louisiana-inspired comfort meal!
💡 Pro Tip: The secret to deeply flavorful gumbo is a dark, slow-cooked roux! Stir constantly until it reaches a rich chocolate-brown color, then let the chicken and sausage simmer slowly to build layers of smoky, savory flavor. Always add the shrimp near the end so they stay perfectly tender!
