Cotton Candy Cake
Ingredients:
For the cake:
2 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
¾ cup unsalted butter, softened
1 ½ cups granulated sugar
4 large egg whites
1 teaspoon vanilla extract
1 teaspoon cotton candy flavoring (or extract)
1 cup whole milk
Pink and blue gel food coloring
For the frosting:
1 cup unsalted butter, softened
3 cups powdered sugar
2–3 tablespoons heavy cream
1 teaspoon vanilla extract
½ teaspoon cotton candy flavoring
Pink and blue food coloring (optional)
Cotton candy for garnish (add just before serving)
Instructions:
1️⃣ Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans. Line the bottoms with parchment paper for easier release.
2️⃣ In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
3️⃣ In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 3–4 minutes.
4️⃣ Add the egg whites one at a time, beating well after each addition.
5️⃣ Mix in the vanilla extract and cotton candy flavoring.
6️⃣ Alternately add the dry ingredients and milk to the batter, starting and ending with the dry ingredients. Mix until just combined.
7️⃣ Divide the batter evenly into two bowls. Tint one portion pink and the other blue using gel food coloring. Stir gently to combine.
8️⃣ Spoon dollops of each colored batter into the prepared cake pans, alternating to create a swirl effect. Swirl gently with a knife for a marbled look (optional).
9️⃣ Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean. Cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
🔟 While the cakes cool, prepare the frosting. Beat the butter until creamy. Add powdered sugar gradually, then mix in vanilla, cotton candy flavoring, and cream until desired consistency is reached. Add pink or blue coloring if desired.
1️⃣1️⃣ Once cakes are cool, level them if needed. Frost the top of one layer, add the second layer, and frost the entire cake.
1️⃣2️⃣ Just before serving, decorate the top with fresh cotton candy. Do not add cotton candy in advance as it will melt into the frosting.
