Mashed Potato Long Fries (Aloo Fries / Potato Sticks)
These are crispy outside and soft inside—made from mashed potato dough shaped into long fries.
Ingredients
* 3 large potatoes (boiled)
* 2 tbsp cornflour (cornstarch)
* 2 tbsp all-purpose flour (optional, for extra crispiness)
* ½ tsp salt (or to taste)
* ½ tsp black pepper
* ½ tsp chili flakes (optional)
* ½ tsp garlic powder (optional)
* Oil for deep frying
Method
1. Prepare mashed potato
1. Boil potatoes until soft.
2. Peel and mash completely (no lumps).
2. Make dough
3. Add cornflour, flour, salt, pepper, and spices.
4. Mix into a smooth, soft dough.
* If too sticky → add a little more cornflour
* If too dry → add 1 tsp water or milk
3. Shape fries
5. Put dough into a piping bag (star nozzle preferred).
6. Pipe long fry shapes onto a tray or cut with knife into strips.
4. Chill
7. Freeze or refrigerate for 30–45 minutes (important for firmness).

8. Heat oil on medium-high heat.
9. Fry until golden and crispy.
10. Remove and drain on paper towel.

* Peri-peri spice mix
Tips
* Chill before frying to prevent breaking.
* Don’t fry on low heat (they will absorb oil).
* Pipe uniform shapes for even cooking.
* For extra crispiness, double fry (light fry → rest → final fry).
