1 pound chicken breast tenders

½ teaspoon salt
¼ teaspoon black pepper
1 tablespoon fresh thyme for garnish (optional)

☞Instructions :

1- Pat the chicken tenders dry to remove any excess moisture. Use a fork to remove any tendons from the chicken. Place the tenders in a large bowl.
2- Add olive oil, lemon juice, dried thyme, paprika, garlic powder, salt, and black pepper to the bowl. Stir well to evenly coat the chicken with the marinade. Cover and marinate for 30 minutes to 8 hours in the refrigerator.
3- Preheat the grill or grill pan to medium heat.

Ingredients :

2 tablespoons olive oil
1 onion, chopped
2 large carrots, chopped
2 celery stalks, chopped
1 teaspoon salt, plus more to taste
½ teaspoon black pepper, plus more to taste
2 garlic cloves, minced
1 ½ pounds boneless skinless chicken breasts
1 ½ teaspoons dried thyme
8 cups water
½ cup short grain rice
2 roma tomatoes, chopped
1 small zucchini, chopped
2 tablespoons fresh dill, chopped
2 tablespoons lemon juice

Instructions :

1- In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium heat. Add the chopped onions, carrots, and celery, season with salt and pepper, and cook, stirring occasionally, until the vegetables are slightly softened, about 5–7 minutes
Add the minced garlic to the pot and cook for another 1 minute, stirring, until it becomes fragrant.

2- Push the vegetables to the sides of the pot and nestle the chicken breasts in the center. Season with salt, pepper, and dried thyme. Cook the chicken undisturbed for 5 minutes, then flip to the other side.

3- Pour in the water, bring the mixture to a boil, then reduce the heat to medium-low. Cover and simmer for about 25 minutes, or until the chicken is fully cooked.

4- Remove the chicken from the pot and transfer it to a cutting board. Once it has cooled slightly, cut the chicken into small cubes and return them to the pot.

5- Stir in the rice, chopped tomatoes, and zucchini. Continue to simmer uncovered over medium-low heat for about 30 minutes, or until the rice is tender and the broth has slightly thickened.

4 boneless, skinless chicken breasts (6 oz each)
1/4 cup balsamic vinegar
2 tablespoons honey

1 teaspoon dried basil
1 teaspoon salt
1/2 teaspoon black pepper
4 garlic cloves, minced
2 pints cherry tomatoes, halved
Chopped parsley, for garnish

☞Instructions :

Preheat your oven to 425°F (220°C).
Pat the chicken breasts dry with a paper towel. Cover with plastic wrap and use a meat mallet or rolling pin to pound the chicken to an even thickness. Place the chicken breasts in a 9×13-inch oven-safe baking dish.
In a small bowl, whisk together balsamic vinegar, honey, olive oil, Dijon mustard, basil, salt, pepper, and minced garlic until well combined.
Pour the balsamic marinade over the chicken breasts and flip each piece to coat them evenly. Arrange the halved cherry tomatoes around the chicken in the baking dish.
