Ingredients

2 pounds beef chuck roast, cut into 1-inch cubes
2 tablespoons olive oil (or vegetable oil or lard)
1 large yellow onion, chopped
1 jalapeño pepper, chopped

4–5 garlic cloves, chopped
4 large Roma tomatoes, chopped (or 2 cans diced tomatoes)
2 cups beef broth, divided
1 teaspoon Mexican oregano
1 teaspoon freshly ground cumin
Salt, to taste
Black pepper, to taste
2 pounds potatoes, peeled and diced

It’s cozy, soulful, and made for gathering around the table. Every bowl feels like a warm hug with a little kick.

Ingredients

2 large boneless, skinless chicken breasts
2 cans (15 oz each) hominy, drained and rinsed
4 large dried guajillo chiles
2 medium dried ancho chiles
1 medium white onion, chopped
3 large garlic cloves, minced
4 cups low sodium chicken broth
1 teaspoon ground cumin

Add the drained hominy and stir well. Continue cooking on low for 30 minutes to let the flavors come together.
Taste and adjust salt and pepper as needed. Add a pinch of cayenne or chopped jalapeño if you want extra heat.
Serve hot in bowls and top with chopped cilantro, sliced radishes, and a squeeze of fresh lime.

French Onion Short Rib Soup with Gruyère Toast

INGREDIENTS:

- 6 tablespoons salted butter
- 4 medium yellow onions, thinly sliced
- Black pepper, to taste
- 2 shallots, sliced
- 4 cloves garlic, chopped
- 2 tablespoons fresh thyme leaves
- 2 tablespoons chopped fresh sage
- Red chili flakes, to taste
- 6-8 cups low sodium chicken broth
- 1/2 cup tamari or low-sodium soy sauce
- 4 pounds bone-in beef short ribs
- 2 bay leaves
- 1 star anise (optional)
- 2 cups baby carrots
- 6 slices French bread
- 2 cups shredded Gruyère cheese
Instructions
1. Prepare the Soup Base
• Caramelize the Onions:
In a large, heavy-bottomed pot or Dutch oven, melt the 6 tablespoons of salted butter over medium heat. Add the thinly sliced yellow onions and a few grinds of black pepper. Cook slowly, stirring occasionally, for about 30–40 minutes until the onions turn a deep golden-brown and become very soft and caramelized. This step is crucial for developing the rich, sweet flavor of the soup.
• Add Aromatics:
Stir in the sliced shallots and chopped garlic. Cook for an additional 2–3 minutes until they soften and become fragrant. Then, add the fresh thyme, sage, and a pinch of red chili flakes (adjust according to your heat preference). Let the herbs bloom in the butter for about 1 minute.
2. Build the Soup
• Deglaze and Add Liquids:
Pour in 6 to 8 cups of low-sodium chicken broth and the ½ cup of tamari (or low-sodium soy sauce). Use a wooden spoon to scrape up any browned bits from the bottom of the pot, as these add extra flavor.
• Incorporate the Short Ribs and Spices:
Place the 4 pounds of bone-in beef short ribs into the pot along with 2 bay leaves and the optional star anise. Bring the mixture to a simmer.
• Simmer Slowly:
Reduce the heat to low, cover the pot, and let it simmer gently for about 2½ to 3 hours. This slow cooking time allows the beef to become very tender and for the flavors to meld together.
• Add Baby Carrots:
In the last 30 minutes of cooking, stir in the 2 cups of

Crispy Bang Bang Salmon Bites

Ingredients:

For the Salmon Bites:

1 1/2 pounds salmon fillets (skin removed, cut into bite-sized pieces)
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional, for extra heat)
For the Bang Bang Sauce:

1/2 cup mayonnaise
1/4 cup Thai sweet chili sauce
1 tablespoon sriracha sauce (adjust for preferred heat level)
1 tablespoon honey
1 tablespoon lime juice (freshly squeezed)
Optional Garnish:

Fresh parsley or cilantro, chopped
Green onions, sliced
Sesame seeds
Directions:

Step 1: Prep the Salmon

Pat the salmon fillets dry with paper towels to ensure a crispy texture. Remove any skin and cut the salmon into 1-inch bite-sized cubes.
Place the salmon pieces in a large bowl. Drizzle with olive oil and sprinkle with garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper (if using).
Toss gently to coat the salmon evenly with the seasoning.
Step 2: Make the Bang Bang Sauce

In a small mixing bowl, whisk together mayonnaise, Thai sweet chili sauce, sriracha, honey, and lime juice until smooth and creamy.
Taste and adjust the sauce—add more sriracha for heat or honey for sweetness. Set aside.
Step 3: Cook the Salmon

Heat a large non-stick skillet over medium-high heat and add a small amount of olive oil to prevent sticking.
Once the oil is hot, add the salmon pieces in a single layer, making sure not to overcrowd the pan. Work in batches if needed.
Sear the salmon for 2-3 minutes per side, gently turning to brown all sides. Cook until the salmon is golden and crispy on the outside, tender and flaky inside.
Transfer cooked salmon bites to a plate lined with paper towels to absorb excess oil.
Step 4: Coat in Bang Bang Sauce

Choose your serving style:
Drizzle it: Place the salmon bites on a serving platter and drizzle the sauce over them.
Toss it: Add the salmon bites to a bowl, pour the sauce over, and gently toss to coat.
Step 5: Garnish and Serve

Garnish the salmon bites with chopped parsley, green onions, or sesame seeds for extra flavor and color.
Serve immediately to enjoy their crispy texture and vibrant flavors.
