Long celebrated for his three-Michelin-star tenure at Hôtel & Spa du Castellet, Chef Christophe Bacquié opened his own restaurant in Provence in 2023, La Table Des Amis (“The Friends’ Table”). Just one year later, his new venture was awarded two Michelin stars—an affirmation of a cuisine that has evolved toward even greater clarity and harmony.

For his residency at Ritual at Manresa, Chef Christophe Bacquié brings the soul of **La Table des Amis**—a restaurant conceived not simply as a place to dine, but as a place to share. A table where gastronomy becomes memory, and where each meal is designed as a moment suspended in time.

Rooted deeply in Provence and the Mediterranean, Bacquié’s cuisine is seasonal, expressive, and profoundly respectful of terroir. Technique is present, but discreet—felt rather than seen—always in service of flavor, balance, and the integrity of the product.

“My cuisine is Mediterranean and contemporary, placing ingredients at the forefront, with plenty of flavor. Chef Jaime Rodríguez Camacho spent years exploring the Caribbean coast of Colombia meeting indigenous people, discovering new flavours and ingredients and documenting recipes that were in danger of being lost. For 8 years, he has been researching and showcasing the importance of the cuisine and pantry of this region, working hand in hand with small producers, fi shermen, and artisans, consolidating all our research together with the Botanical Garden of Cartagena, biologists, and educational institutions.

Celele is considered one of the best restaurants in Latin America, having been awarded several recognitions over the years by the famous list “The Latin America’s 50 Best Restaurants”. This March we celebrate the theme: “Where history meets your plate.” Food is a window into culture, with world-class Chef Paco Morales whose work is deeply rooted in the heritage and traditions of their lands. Noor, the three Michelin Star restaurant, unearths centuries-old culinary traditions from the south of Spain, creating a dining experience that feels like a journey through time. Chef Paco Morales is one of the most prominent figures in Spanish gastronomy, with Ferran Adrià calling him “one of the most exciting chefs in the world”. It is not always a given to find a restaurant that is fully able to express a chef’s desire and passion for food, life, art and nature, but this is definitely the case at Evvai, where Luiz Filipe Souza has created a unique space where his true essence shines through both in the ambience and his cuisine.

His creations are a captivating fusion of Italian and Brazilian influences, known in Brazil as Oriundi cuisine. He conducts extensive research on ingredients and sources raw materials from small producers and specific regions.

His innovative fusion cooking results in dishes that are not only visually attractive, but teeming with skill, knowledge and balance. This is showcased on a single tasting menu, Oriundi (symbolising the interchange between cultures), featuring delicate appetisers that fly the flag of both Brazil and Italy.
