Cornish Hen vs. Whole Chicken — what’s the difference, and which should you choose?

We get this question a lot, so here’s a simple breakdown to help you decide what works best for your table.

Cornish Hen (2–4 lbs each) A Cornish hen is a smaller whole bird, perfect for individual servings or intimate meals. Each hen is naturally portioned, making it easy to serve one bird per person or split between two. They roast quickly, develop beautifully crispy skin, and make a great option for special dinners, date nights, or smaller households.

Whole Chicken (4–6 lbs) A whole chicken is the classic choice for family meals and meal prep. It feeds more people, stretches further for leftovers, and gives you the added bonus of making rich homemade broth from the bones. One chicken can easily turn into multiple meals throughout the week.

Bottom line: Choose Cornish hens for a smaller, elegant meal.
Choose whole chickens for value, leftovers, and versatility.
Both are pasture-raised on our farm and raised with care—just different ways to enjoy the same quality food.

We’re excited to introduce a new product from our farm—Pasture-Raised Cornish Hens.

These smaller roasting birds are perfect for intimate meals, special occasions, or anyone looking for a beautifully portioned whole chicken. Each hen is raised on pasture with access to fresh air, sunshine, and room to roam, just like all of our poultry.
Cornish hens are known for their tender meat and rich flavor, and their size makes them ideal for roasting whole. You get crispy skin, juicy meat, and an impressive presentation without the commitment of a large chicken.

Each bird weighs approximately 2–4 lbs and is perfect for one generous serving or two lighter portions.

Cooking ideas: roast with butter and herbs, pair with seasonal vegetables, or prepare for a simple but elevated weeknight meal.
