Many of you who visit the farmers market do so as you target your favorite market vendors . Unconsciously in your mind, we are part of your āteamā. You attend the market and you get the things you want and maybe some surprise stuff you didnāt know was available and you go on to the rest of your schedule which includes cooking some delicious food with your āscoreā .

But bringing our vegetable and fruit goods to the market and then back home takes its toll on the produce .
Eventually fruit and vegetables are past their prime but thatās where you no longer see it .
Many of us have secondary plans for produce like animal feed , strawberries become future strawberry plants , seed harvested from squash , and value added products .
I should like to add that ( and Iāll speak for myself, but Iām sure others might chime in ) , some of this becomes my families meals .
Like this overwintered onions and potatoes . Often over wintered potatoes and onions are more delicious but quicker to bolt .
These onions and potatoes became my farmstead pies today .
Sprouting parts of the potatoes are separated for planting and these sprouting onion tops and bottoms become seed producers when replanted .
Infact I learned from Romanian onion farmers to replant the tops and reharvest the giant grown onion tops ( usually just under a meter tall ) roasting them over coals for a delicious treat .

Tomatoes get processed into canned goods or in our case sauce and sundried tomatoes
Broken or slightly damaged produce is used by us , saving the best superb looking produce for you , that part of the ā teamā
We do this many times without even thinking as it comes second nature to us . This is the part of the ā team ā you might not know .
