MISO-GLAZED BLACK COD: This decadent dish is a great idea for a date night or special occasion. Fish Monger Glenn Glenn J Anderson has developed this recipe for you to try at home. Black Cod is always available by special order- just ask us!

INGREDIENTS:
-1/4 cup mirin
-1/4 cup sake
-1/4 cup miso paste
-3 TBSP sugar
-3 TBSP soy sauce (white soy aka shiro shoyu is preferred, but not essential)
-Garnish options: fresh lime juice, chives, cilantro (finely chopped)
-Black cod filets (glaze recipe will make enough for approximately 6 filets and will keep in the fridge for a month).

INSTRUCTIONS:
1- In a small sauce pan, bring mirin, sake, and sugar to a simmer for about 5 minutes. Remove from heat.
2- Whisk in miso paste, followed by soy sauce. Allow mixture to come to room temperature before using further.
3- For fish preparation: Marinate black cod filets for 3-30 hours.
4- When ready to cook, set broiler to high. Place cod filets on an oven-safe tray, 6-7 inches from the heat source under broiler. Cook for approximately 7 minutes. Exterior should be golden brown with light charring on edges.
5- Finish with additional salt to taste, fresh lime juice, and finely chopped chives or cilantro.

SHEET PAN SALMON BAKE. This is a spectacular dinner hack for your busy week nights! You can do a larger piece of salmon like you see here or portion out fillets. Surround with delicious tomatoes, potatoes, and lemon. Drizzle with herbaceous and garlicky olive oil. Add Feta cheese to veggies before serving and you’ve got one amazing meal!

Serves 4
INGREDIENTS:
-4 salmon filets
-1.5 baby potatoes, halved
-1 pint baby tomatoes
-1 lemon, thinly sliced
For sauce
-juice of 1 lemon
-1/4 cup olive oil
-1 TBSP Dijon mustard
-1 TBSP dried oregano
-3 garlic cloves, pressed or minced
-1.5 tsp salt
-1/2 tsp pepper
Optional for serving
-1 cup Feta cheese, crumbled
1/4 cup chopped dill
-1/4 cup chopped fresh parsley

INSTRUCTIONS:
1- Preheat oven to 350 degrees. Make sauce by whisking lemon juice, olive oil, Dijon mustard, oregano, garlic, salt, and pepper. Adjust seasoning as desired.
2- On a large sheet pan, add potatoes and drizzle with half of the sauce. Roast in oven for 20 minutes.
3- Once potatoes are roasted, add the tomatoes and gently toss with a drizzle of sauce. Place salmon filets in between veggies. Drizzle the remaining sauce evenly across filets. Use a basting brush to spread if desired. Arrange lemon slices among vegetables and/or on salmon filets.
4- Place in oven for about 10-12 minutes or until you reach your desired cook level.
5- Plate each filet on a plate with roasted vegetables. Top with feta and chopped herbs. Enjoy!

INSALATE DI MARE: This chilled Italian classic seafood salad is perfect to beat the heat of summer. A light, bright, and refreshing dish, Insalate Di Mare, is perfect to make ahead and use as an app, side, or main dish! Deliziosa!

Serves 4
INGREDIENTS:
-1 lb calamari rings
-1/2 lb large shrimp, peeled and deveined (tail on/off to preference)
-1/2 lb sea or bay scallops
-1/2 lb cooked octopus, optional (add more of the other seafood if no octopus)
-2 stalks celery, finely chopped
-1 small red onion, thinly sliced
-1 large red bell pepper, finely diced
-1/2 cup fresh parsley, chopped
-1 clove garlic, minced
For Dressing:
-1/3 cup extra virgin olive oil
-3 TBSP fresh lemon juice (about 1 large lemon)
-1 TBSP white wine vinegar (optional)
-salt and pepper to taste
-pinch of red pepper flakes (optional)
INSTRUCTIONS:
1- Prepare seafood by brining a large pot of salted water to boil. While waiting for boil, prepare an ice bath in a separate bowl. Working in batches, cook calamari rings until opaque (approx 60-90 sec). Immediately plunge in ice bath to stop cooking. Add shrimp to boiling water and cook for about 2 minutes until they are pink and cooked through. Place in ice bath. Add scallops and cook for 1-2 minuets until slightly firm and opaque (do not overcook). Plunge in ice bath.
2- Once seafood is completely cooled, drain well and pat dry. Place seafood into a large bowl.
3- Add chopped celery, red onion, red bell pepper, parsley and, minced garlic into bowl with seafood.
4- In a separate small bowl, whisk together the olive oil, lemon juice, white wine vinegar (if using), salt, pepper, and pepper flakes (optional), until well blended.
5- Pour dressing over seafood and aromatic mixture and toss gently until well coated.
6- For best flavor, cover and chill salad for at least an hour (or up to 4) before serving. Serve with extra parsley, lemon wedges, and crusty bread.

DIJON SAFFRON MUSSELS- Recipe courtesy of Fish Monger Glenn This creamy and delicious dish is perfect for sharing with your favorite people! Herbs, white wine, and delicate saffron give the mussels a flavor you will be craving over and over.

INGREDIENTS:
-2 pounds mussels, cleaned
-2 TBSP shallots, finely mined/diced
-1/2 TBSP olive oil
-1 TBSP garlic, minced
-1/2 tsp saffron threads
-1/2 tsp fresh thyme
-1 1/2 TBSP Dijon mustard
-1/2 cup white wine
-1/4 cup whipping or heavy cream
-juice from 1/8 of a lemon
-salt and freshly ground pepper

INSTRUCTIONS:
1- Over medium heat in a large sauté pan, heat 1/2 TBSP olive oil and add shallots. Cook until tender and translucent (about 3 minutes).
2- Add garlic to pan. Stir and sweat until fragrant (no longer than 1 minute).
3- Add white wine and reduce until it just covers the bottom of the pan. Add a healthy pinch of salt and a few twists of fresh ground black pepper.
4- Add cream, saffron, thyme, and half of the parsley. Reduce liquid until thick enough to coat the back of a spoon.
5- Stir in Dijon mustard to evenly incorporate. Add mussels to the pan and gently toss/stir to coat the shells.
6- Cover the pan lid and cook until mussels are opened (about 3 minutes).
7- With a slotted spoon, remove mussels to serving dish and keep warm.
8- The liquid from the mussels will have thinned. Reduce the liquid further by simmering until desired thickness or until it coats the back of the spoon (like step 4).
9- Season liquid with additional salt/pepper to taste and add lemon juice. Pour sauce over mussels, garnish with remaining parsley, and enjoy!

SIMPLE CEDAR PLANK SALMON- this recipe requires no measuring! This can be done on your grill or in the oven too! You can even grab all of these ingredients at any one of our stores and pair with one of our pastas or rice mixes to make it a one-stop shop meal.

INGREDIENTS:
-2 cedar planks
-4 salmon fillets
-olive oil
-Rub with Love Salmon Rub
-1 lemon, thinly sliced (optional)

INSTRUCTIONS:
1- In a large dish or pan, place cedar planks and cover with water. Soak planks for at least 2 hours or up to 24 hours.
2- After planks have been soaked, remove from water and arrange salmon filets on the. Lightly brush the salmon with olive oil. Then, generously season with Salmon Rub and arrange lemon slices on each if desired.
3- Preheat grill to medium-high heat. Once hot, set the grill for indirect grilling (so the cedar planks don’t catch fire). For a two-burner grill, turn one burner off and place cedar planks on the unlit side. If cooking in the oven is preferred, preheat oven to 375 degrees F oven.
4- Allow salmon to cook for about 15-25 minutes (depending on thickness) or until 125-145 degrees F. When salmon reaches desired doneness, remove from heat and allow to rest briefly before serving.
