In honor of all the mama’s out there, we’re bringing back a Mother’s Day recipe that we know she will LOVE, Chorizo Fried Rice with a perfectly jammy egg from our friends at .

Our favorite best part is how easy this dish is, just grab as much leftover rice as you have on hand/desire and add in your preferred amount of veggies, chorizo and spices.

Trust us, she will want this over a stack of pancakes every time 🤤

Chorizo Fried Rice

Sauté chorizo and set aside.

Sauté onion in EVOO and sea salt on medium heat (set aside).

Sauté ginger and garlic in same pan until very crispy but not burned.

Return alliums& chorizo to pan. Add rice (you may have to break it up and mash it around, it should be precooked/older and cold) and a splash of cold water to wet bottom of pan and cover until you can smell the alliums.

While rice is cooking, make jammy or scrambled eggs with loads of butter. Take them off the heat to rest just when they have started to form.

Add frozen peas and carrots to rice mixture. Close lid for three minutes. (If you are opting for fresh vegetables cook them with the onion in step 1).

Flip rice and you should see some char. Congratulations, this is what you would never, ever achieve with a wok. Close lid once again.

Make your jammy over medium egg in a pan and slide on top lovingly.

Add soy sauce and white pepper or try capsaicin powder or chile oil to taste.
