One of our favorite Detox Soup recipes is easy to whip up at home!
White Bean & Kale Soup
Ingredients
1½ cups dried cannellini beans, soaked overnight
1 yellow onion, finely chopped
4 cloves garlic, minced
2 tablespoons olive oil
2 large carrots, peeled and chopped
1 stalk celery, diced
¼ cup vegetable broth
1 tablespoon lemon juice or apple cider vinegar
2 cups kale, stems removed, finely chopped
3–5 cups vegetable broth (start with 3 cups)
1 tablespoon tomato paste
1 teaspoon salt, or to taste
¼ teaspoon black pepper, or to taste
¼ teaspoon red pepper flakes (optional)
¼ teaspoon Italian seasoning
2 bay leaves
1 teaspoon dried thyme
½ teaspoon dried oregano
Instructions
Cook the beans
Drain and rinse soaked beans. Place in a pot and cover with water by about 2 inches. Bring to a boil, then reduce heat and simmer 45–60 minutes until tender. Drain and set aside.
Sauté vegetables
Heat olive oil in a large pot over medium heat. Add onion and cook until lightly browned, about 5–7 minutes. Add garlic, carrots, and celery. Cook for about 10 minutes, stirring occasionally, until softened and slightly browned.
Deglaze
Add ¼ cup vegetable broth and lemon juice or apple cider vinegar. Cook for 3–5 minutes until mostly absorbed.
Simmer
Add cooked beans, 3 cups vegetable broth, tomato paste, salt, pepper, red pepper flakes, Italian seasoning, bay leaves, thyme, and oregano. Stir well. Bring to a boil, then cover and reduce heat. Simmer for 15–20 minutes.
Blend
Remove bay leaves. Transfer about 2½–3 cups of the soup to a blender and blend until smooth. Return to the pot and stir to combine. Add more broth if needed to reach desired consistency.
Finish
Add chopped kale and simmer for 3–5 minutes until wilted. Taste and adjust seasoning as needed. Add an extra squeeze of lemon juice if desired.
