First up is Rebel Cheese’s Black Truffle Pecorino. It’s dry and nutty like a good hard cheese should be. The black truffle flavor isn’t in your face but also not barely there. It’s a very good balance of flavor.

I just got my first order from Rebel Cheese

I have plans for the Gruyère… French onion soup all the way…

But what should I do with the Brie and truffle pecorino??? Share your recipe ideas.

Fried tofu knots and rice cakes

* 2 tablespoons gochujang, more or less to taste
* 2-3 tsp grated ginger
* 2 tbsp pressed or minced garlic
* 1/4 cup strawberry jam or preserves. I use Trader Joe’s
* 1/3 cup ketchup
* 1/4 cup vegan Worcestershire sauce or Chinese black vinegar
* 1/4 cup packed brown sugar
* 1/2 cup water
* Soy sauce to taste.

Whisk all ingredients in a sauce pan over low to medium heat. You want to reduce your sauce till it’s a thick consistency without scorching the sugars

Toss with deep fried tofu knots or rice cakes (caution: deep frying rice cakes is extremely dangerous). You can also choose to air fry instead of deep frying.

*don’t have time to cook down the sauce? Mix all the ingredients except for water in the sauce pan and heat up over medium heat stirring constantly. Then add 2 tbsp of cornstarch to the 1/2 cup of water to make a cornstarch slurry. Add to your sauce slowly while mixing. Once thickened remove from heat and serve.

Since moving to Kentucky I’ve been having a difficult time finding a variety of great vegan items that are also gluten free.

Gochujang is a staple in our home. The vegan premade gochujang in the local stores all contain wheat… if you can even find vegan in the first place.

Tonight I followed Minimalist Bakers easy gochujang recipe and tripled it. 🤞🏻 that this recipe makes good banchan, japchae, bibimbap, and more.

Costco finds.
I found these falafels in the refrigerator section of Costco and they are so delicious. We made wraps using BFree protein wraps that I also found at Costco. I made tzatziki sauce following Minimalist Baker but used Silk plain almond yogurt instead of dairy yogurt.

Let’s talk about school lunches for you or your vegan kids.
I had recently seen a post in a vegan group asking about what we feed our kids for school lunches when the school is a peanut free school because they packed PB&J every day.
This is my high schoolers lunch for today. Wrap using Plant Provisions smokehouse deli slices, Daiya Foods American slices, lettuce, tomatoes, cucumbers, shredded carrots, and vegan mayo on a BFree protein wrap. Fresh fruits and vegan cheddar crackers from ALDI USA.
We also keep a snack cabinet with various snack so the kids can grab something extra to have at school when they feel a little hungry.

This weekend is the Cherokee National Holiday. I use this time to teach my kids traditional foods of ancestors on my side.
Roasted corn, roasted pattypan squash with pepita and dandelion greens “pesto”, Yansa Diligwu (wild rice and ground “meat”), bean bread.

Yansa Diligwu would normally be made with buffalo, but we used Impossible ground meat.

When you’re visiting Dallas you HAVE to eat at VEGAN FOOD HOUSE. There’s so many flavors that I miss with eating vegan and gluten free. My favorite was the Nashville hot chicken sandwich. It’s one thing I’ve missed since the loss of Project Pollo.
The fried oyster mushrooms were not only amazing on the sandwich but also as an entree with lemon and house made tartar sauce.
The one thing that really threw me was the beans. They hit me with nostalgia. Perfectly spiced like southern style red beans.
