Garden tomatoes ready to be preserved for homemade pasta sauce throughout the winter! The green tomatoes had to be picked early because the branches were so heavy that they snapped… So I’ll be turning the green ones into pickled tomatoes! 🍅

I don’t know anyone who doesn’t love a deviled egg, so I put a twist on the traditional and made these garlicky, tangy, and slightly spicy pesto deviled eggs using my favorite Happy Egg with the flavorful bright orange yolks. Because a happy hen makes a happy egg… And these will make everyone happy at your next Spring cookout.

6 hard boiled Happy Eggs, cooled
¼ cup basil pesto
2 tbsp. mayonnaise
Juice from ½ a lemon
¼ tsp. red pepper flakes (or to taste)
Salt to taste
Black pepper to taste
Freshly shredded parmesan cheese

Cut the hard boil eggs in half. Carefully scoop out the yolks and place them in a medium mixing bowl. Set the whites aside. Add the pesto, mayonnaise, lemon juice, red pepper flakes, and salt and pepper to the yolks. Mash and mix everything together until smooth. Spoon or pipe the filling into each egg white half. Top with more red pepper flakes, if desired, and shredded parmesan cheese. Enjoy!

A Happy Hen makes a Happy Egg. And these Happy Egg hens are raised outside on pasture, giving them sunshine, fresh air, and a nutritious diet. With quality you can see and taste, Happy Eggs are perfect for your Springtime recipes - like this Deviled Egg Salad. It’s a twist on the classic and will help you welcome in warm, sunny days.

6 hard boiled Happy Eggs, peeled and chopped
¼ cup mayonnaise
3 tsp. yellow mustard
3 tbsp. finely chopped dill pickles (or dill pickle relish)
1 tbsp. dill pickle brine
1 tbsp. minced fresh chives
1 ½ tbsp. minced fresh dill
¼ tsp. garlic powder
½ tsp. smoked paprika
¼ tsp. cayenne, or to taste
¼ tsp. salt, or to taste
¼ tsp. black pepper, or to taste

Add all of the ingredients to a medium bowl. Gently mix until everything is combined. Top with extra chives and smoked paprika, if desired, and serve alongside your favorite crackers or bread for sandwiches.

Some of my favorite Fall items to purchase are miniature pumpkins to make all the pumpkin desserts. And of course, any pumpkin baked good would not be the same without Happy Eggs! I love baking with Happy Eggs because their bright orange yolks add so much flavor and richness to any dessert. I also love using Happy Eggs because I know they come from happy hens who spend their days outside where they are raised by caring family farmers. They are the perfect happy addition to your Fall baking!
