Cilantro rice, birria chicken, chipotle crema, refried beans, guac, lime pickled red onions, cheese sauce, and roasted pumpkin. Truly life changing.

We love doing what we do! It’s such a luxury to live out your dream. Creating and learning every day. Which is exactly what we have the opportunity to do.

This month we decided to do Latin American food. We clocked a lot of hours at the library and online educating ourselves. Learning about flavor profiles that go beyond beef tacos with cheddar cheese.

This dish is inspired by Guatemala with ancho roasted beets, avocado, radish, cotija, and lime pickled red onions. Come stop by EccoAdessoVineyards today to try it and let us know what you think.
