😢😞We are not going to be setting up at the barn on rte.58 again this summer and we didn't find another spot, so we decided to regroup and work on getting a trailer and open next summer.

Got some fresh jowls the other day from my neighbors freshly harvested pigs.
Did a 24-hour brine and a low temp smoke with apple and maple.

Smoked my first brisket this week! And it came out pretty darn good I must say!!
We'll be serving it this Friday night!
Brisket sandwiches on a steak roll with Smoked Gouda and Romesco sauce.
