Perfect timing for the class last night at the Loretta Paganini School of Cooking! Comfort food for these cold days! The menu included oxtail soup with beans, Tuscan short ribs over pappardelle pasta, pot roast with root vegetables, Chianti braised ossobucco with gremolata sauce over risotto, and wine poached pears with zabaglione custard.
