❤️🤍💙 Transform those FROZEN BERRIES into a berry delicious desert 😋
This berry cobbler’s been in the family for generations—passed down from my Great-Grandma Dorothy—and it’s still perfect. Thanks to frozen berries, it’s a go-to all year long! It’s easy, unfussy, and always a hit—sure to be your new family favorite too ❤️
Berry Filling
8 cups frozen mixed berries
(I like Trader Joe’s Organic Mixed Berry Blend or the triple berry blend from Costco)
1⅓ cups granulated sugar
⅓ cup instant tapioca or 2½–3 tablespoons tapioca flour (tapioca starch)
Juice of 1 lemon
Generous pinch of salt
Topping
2 cups unbleached all-purpose flour
OR 1 cup oat flour + 1 cup gluten-free all-purpose flour for a GF option
1 cup granulated sugar
2 teaspoons baking powder
½ teaspoon coarse salt
2 eggs, unbeaten
½ cup melted butter, avocado oil, or melted coconut oil
Instructions
1. Preheat oven to 350°F.
2. Add all the berry filling ingredients—berries, sugar, thickener of choice, lemon juice, and salt—straight into a greased 9×13-inch baking dish and stir to combine.
3. If using instant tapioca, stir until evenly distributed.
If using tapioca flour, stir very well so the flour fully dissolves and coats the berries (no dry pockets).
4. In a medium bowl, whisk the flour(s), sugar, baking powder, and salt. Add eggs and mix with a fork until crumbly.
5. Sprinkle the topping evenly over the berries, then drizzle with the melted butter or oil.
6. Bake 45–60 minutes, until golden and bubbling.
Serve warm with vanilla ice cream. Share with your people. Be happy ❤️
