Good Evening Facebook Fam,
I had a customer ask me about my wing technique. She said they were the best deep fried wings she has had. I told her I don’t deep fry my wings. My technique doesn’t involve deep or air frying. Baked! I’m posting these, as these just came out the oven about 15 minutes ago. We love making taste buds happy. We do it a little different 🔥♥️👉🏽I also like to pay attention to the presentation of the food. That’s just as important to me, as how it taste.

People always ask me “Todd, who taught you how to cook”? My answer is always the same…. “I just spent a lot of time observing, asking questions and then implementing what I learned”. My grandma (Carlene) stayed with us a long time. So my dad had 6 sisters who would come and visit and take care of grandma. So they were always cooking, so I had plenty of instructors.
My Mac N Cheese, I learned from both my aunts… Roselle (Susie) Dalton and Evelyn Wadlington. I took both recipes and added my own twist and that’s what made it into what it is today. So I have them to thank for that.
Today I had to do Peach Cobbler for William Gainey Jr. He’s been patient and today is his day! I learned cobblers and the crust and all from Elsie (Jeannette) Brown and Evelyn. They did the crust just like grandma and I just kept it rolling. The Sweet Potato Cobbler is one where you have to get that crust and juice right. And you have to use the Red and WHITE sweet potatoes!!
The crust that goes on top of my cobblers, I learned from Gina Hart, and aunt Lucille Smith taught her. So a lot of love and knowledge goes into

My Chicken N Dumplings, I learned from momma. Cornelia Dalton. I twisted them to my own style and flavor profile, but she taught me.
So many dishes I learned from family and I guess as long as I’m making taste buds happy, you will always be tasting a little bit of their influence!
