~Rock Some Moroccan~
We spiced up our Monday night with an "exotic" Moroccan meal...it was definitely NOT a boring run of the mill weeknight meal. Dinner was so fun! This morning I pulled from the freezer some frozen pork chops that were already marinated in some Wt Rockin' Moroccan Rub and Natural Grapeseed Oil. Simply add 1/2 to 1 tsp. of the rub per each chop depending on how big they are, and about 2 TBS. of GSO per 4 portions. Marinate and grill or pan fry them. Try them with this couscous and dinner is served :-)
*Carrot Couscous*
-10 oz. Plain Couscous
-2 cups prepared Wt Vegetable Bouillon
-1 small to medium onion finely diced
-2 garlic cloves finely chopped
-3 carrots finely diced
-3/4 tsp. Wt Opa Greek Seasoning
-Salt to taste
-1-2 TBS. butter (optional)
Saute onion, carrot and garlic in some GSO until tender. Add two cups of broth and Opa Greek Seasoning and bring to a boil. Stir in couscous, cover and remove from heat. Let stand 5 min. Add a dab of butter if desired then fluff with a fork before serving.

Who knew, it's National Shrimp Day....I say hallelujah, this is what's for dinner tonight baby!
*Americans eat about 1.7 billion pounds of the crustacean per year, making it the most popular seafood in the country. It's quick-cooking and low in calories, and I would have it every day if I could I think :-)
~Shrimp Scampi~ (Recipe on Scampi Blend Jar)
-8 ounces cooked linguini
-3 tablespoons Natural Grapeseed Oil
-1 1/2 teaspoons Scampi Blend
-1 pound shrimp, peeled, deveined
-2 tablespoons Roasted Garlic Grapeseed Oil
-1 teaspoon Scampi Blend
-1/4 cup dry white wine
Combine 3 tablespoons Natural Grapeseed Oil and 1 1/2 teaspoons Scampi Blend in a cold skillet and mix well. Add the shrimp and cook over medium-low heat until the shrimp turn pink, turning often. Transfer the shrimp to a bowl using a slotted spoon and keep warm. Add 2 tablespoons Roasted Garlic Grapeseed Oil and 1 teaspoon Scampi Blend to the liquid in the skillet. Add the pasta and cook over low heat until the liquid is absorbed, adding the dry white wine if the pasta seems too dry. Combine the pasta and shrimp and serve.

~Mexican Skillet Meal~
In honor of Cinco de Mayo, I wanted to highlight one of my favorite products, the Mexican Skillet Meal! I love it because it's SO versatile. I always call Wildtree's line of Skillet Meals a much healthier and tastier version of Hamburger Helper, with much less sodium, no preservatives, dyes or chemicals. Some delicious ways I've used the Mexican Skillet Meal besides making it simply according to package directions with rice: (p.s.- I always saute a diced onion into skillet meals...just adds great flavor.)
-As a burrito/breakfast burrito filling: For a burrito: add black beans, corn, diced tomatoes, diced peppers, avocado or guacamole and cheese. For a breakfast burrito: add veggies, cheese, scrambled eggs seasoned with taco or fajita seasoning, use a lb. of bulk sausage. Wt Smoky Chipotle Hot Sauce is awesome with both burrito versions.
-As a casserole: prepare with veggies and meat, pour into a casserole dish, top with cheese and bake. As a casserole it's a good idea to add a little extra liquid to ensure it doesn't come out dry.
-As a Mexican Lasagna: Layer with tortillas, cheese and salsa and bake.
-Stuffed Peppers: Remove ribs and seeds, salt and pepper the inside of peppers, fill them with prepared mixture, top with cheese and bake with just a bit of water added to the bottom of your pan to help the peppers steam and soften. Slice the bottom of the peppers slightly so that they stand nicely if you happened to have purchased wobbly peppers :-)

~Sausage, Kale & White Bean Soup~
This one is perfect for a rainy spring day! This was tonight's dinner and I wish there was going to be more of it leftover for tomorrow! I love kale in soups...if you haven't tried it, here's your chance. Kale is so hearty that it keeps a great texture without becoming wimpy.
-4 (+) Kale stalks (remove greens from stalk and chop)
-1 large onion, chopped
-1/4 cup flour
-1 lb. bulk sausage of any flavor
-2 cans of white beans (Cannellini)
-4 cups chicken broth/prepared Wt Chicken Bouillon
-2 cups milk (I used 2%. Use whatever combo of milk or cream that you've got...go crazy :-)
-1/4 tsp. red pepper flakes (+/-)
-1 tsp. Wt Opa Greek Seasoning

In a large ceramic pot brown and crumble sausage, then remove to a paper towel lined plate. Add onion and cook until translucent. Add flour and let it cook out a bit. Whisk in chicken broth, milk, and seasonings. Opa seasoning contains some black pepper so give the soup a taste before adding any additional pepper. Add the beans. Simmer at least 30 minutes. Stir in the kale, cook an additional 10-15 minutes.
*For a restaurant flourish, drizzle a bit of Roasted Garlic Grapeseed Oil onto soup before serving, along with some shaved parmesan.
*I served some jazzed up beer bread muffins with this soup. Mix Wt Beer Bread according to package directions, add 1 tsp. Wt Garlic & Herb Blend and 1 cup (+) of shredded cheese. Divide among a greased 12 cup muffin tin, bake 25-30 min.

~Corned Beef and Cabbage~2 lb. Corned Beef, lean1 sm. Green Cabbage, cut into wedges1 sm. Yellow Onion, cut into fours4 ...

~Corned Beef and Cabbage~
2 lb. Corned Beef, lean
1 sm. Green Cabbage, cut into wedges
1 sm. Yellow Onion, cut into fours
4 large carrots, peeled and cut into 1" coins (can be added later or cooked separately)
2 Tbsp. Wildtree Dill Blend
2 Tbsp. Wildtree Scampi Blend
4 Cups Water with 8 tsp. Wildtree Veg. Bouillon
2 cups Water

Place all ingredients in a slow cooker on low. Cook for 10 to 12 hours or until beef is tender. Serve with boiled potatoes.

~Taco Tuesday!~
It's the little things in life I look forward to.... it's Taco Tuesday at the Obrenski Household! Wildtree Taco Seasoning is AWESOME and free of fillers and chemicals found in grocery store varieties. And good news! Per serving, Wt seasoning is the same in price compared to a grocery store packet.
*Taco Tips*
-Always begin by sauteing some onion before adding your ground meat to the pan...adds great flavor to your meat.
-I often add some pureed cooked sweet potato to the taco meat mixture. It bumps up the nutrition value and gives great flavor and texture. Just make sure not to add too much...begin with 1/4 to 1/2 cup and go from there.
-Use an overturned muffin tin to prop up shells while you're filling them.
-Tacos are best paired with a Corona or freshly made margarita on a beautiful spring weather day like today! ;-)

Simply follow the directions on the jar, this is super easy and delicious comfort food!
*Stew Secrets: Season your beef with Rancher Steak Rub and toss in flour before browning to create an even thicker stew. Brown beef and veggies in Bacon fat or Bacon Grapeseed Oil for even richer flavor! Bacon GSO is of course a much healthier option :-)
