🐟 It’s Tuesday, so you know what that means… another Nick Knows Seafood!

This week, Nick’s talking HALIBUT — and if you’ve walked past it in the case and weren’t quite sure what to do with it, this one’s for you.

Halibut is one of those fish that’s really easy to love. It’s mild, firm and flaky without that strong “fishy” taste. If someone in your house is on the fence about seafood, this is one we usually recommend.

It’s also a premium wild-caught fish, which is why you’ll often see it priced higher than your everyday white fish. But with a beautiful piece of halibut, you really don’t need to do much to it.

🔥 Nick’s biggest tip? Don’t overcook it.

A little olive oil or butter, lemon, garlic, salt, pepper and some fresh herbs — then grill it, roast it or pan-sear it. Keep it simple and let the fish do the work.

🐟 Nick Knows Seafood: Let’s Talk Branzino!

Whole fish can look intimidating in the seafood case—but Nick says don’t let it scare you.

Branzino is the Italian name for European sea bass, and it’s one of the easiest whole fish to love. It has a mild, slightly sweet flavor with delicate, tender flesh—perfect even for someone who normally says, “I don’t like fishy fish.”

So why buy it whole?

🔥 Cooking branzino whole helps lock in moisture and flavor. The skin gets beautifully crisp while the inside stays tender and flaky.

And you don’t have to worry about doing all the prep yourself. We can clean, scale and gut it for you so it’s ready to season and go straight onto the grill or into the oven.

Nick’s favorite way to keep it simple: olive oil, fresh lemon, garlic, herbs, salt and pepper. That’s really all a great branzino needs.

🐟 Nick’s Tip: Don’t be intimidated by the whole fish. Ask your fishmonger to prep it for you, then let the fish do the rest.

There’s a reason swordfish is known as “the steak of the sea.”

Swordfish has a firm, meaty texture that holds up beautifully on the grill without falling apart—and its mild, slightly sweet flavor makes it a great choice even for people who normally say, “I don’t like fishy fish.”

One of the biggest misconceptions I hear is that all farm-raised salmon is the same.

That’s simply not true.

One of our most popular salmon varieties at A.N.S. Seafood is Ora King Salmon from New Zealand—and for good reason.

Ora King salmon are ocean-raised in the pristine Marlborough Sounds, not in land-based tanks. They spend their lives in deep, flowing seawater pens where tides and currents constantly refresh the water.

Just as important is what they’re fed. Ora King salmon are raised on a carefully formulated, nutrient-rich diet made from responsibly sourced marine ingredients, fish oil, fish meal, vitamins, minerals, and natural pigments derived from algae that give the salmon its beautiful color. Their feed is free from added growth hormones.
