It's time for another batch of homemade bacon!
I'll have fresh, homemade bacon available next Sunday for $10 per pound. This bacon is cured and smoked the old-fashioned way for great flavor and quality.

Bacon ribs were cut up and the cure had made it all the way through the room which made me happy! Season with pepper and brown sugar mixture equal parts. Put back on the smoker at 275 until they got around 200°. These are absolutely delicious!

So the first rack of bacon spare ribs are done with the first smoke. Now to chill this down in the fridge and get ready ...

Good afternoon everybody, and happy Friday!
I'm trying a little BBQ experiment this weekend. I have two racks of spare ribs that I cured just like bacon for a full week in the refrigerator.
This is going to be a two-step process. First, the ribs are being smoked with no seasoning at all, just like bacon. Once they reach the proper temperature, they'll be wrapped in foil and chilled in the refrigerator overnight.
After they're thoroughly chilled, I'll slice them into party ribs, season them, and put them back on the smoker until they're tender and ready to eat.
The end result should be bacon-cured spare ribs, and I'm really excited to see how they turn out. I'll be sure to post pictures and let everyone know the results!

I just wanted to take a minute to thank everyone for the brisket orders this weekend. The amount of support was honestly overwhelming, and I truly appreciate every single one of you that ordered, shared the post, or reached out.
It means a lot to me and my family to have such great support from our community. I hope everyone enjoys their holiday weekend, stays safe, and gets to spend some good time with family and friends.

Good evening everyone! First of all, I want to thank each and every one of you for your brisket orders. I truly appreciate the support! I smoked brisket this weekend and I’m going to have some extra available if anyone is interested.
I also have my homemade CK Smokehouse BBQ Glaze available! This stuff is really good on beef, pork, and chicken — it’s become a favorite around here.
One quick update: I’m moving pickup time to 2:00 PM instead of 2:30 PM. If that time doesn’t work for you, just let me know and I’ll do my best to work with you.
