Our beef comes from cattle born and raised on our family’s prairie ranchland, right here in the Flint Hills.

They spend their lives grazing diverse native pastures before eventually being processed at small-town, family-owned facilities. It’s beef that supports working grasslands, rural communities, and a stronger local food system from pasture to plate.

We’re currently accepting a limited number of reservations for fall 2026 beef shares.

A beef share is an investment in a whole animal and a simple way to keep your freezer stocked with healthy, delicious, and prairie-friendly beef at our best per-pound price. Choose a half or quarter—or split one with friends or family—and stock up on beef that directly supports the Flint Hills and rural communities around us.

One of our favorite parts of the Manhattan Farmers Market is the people—friends, customers, and fellow producers.

This season, we’ve been lucky to have great neighbors like Darrell from Parks Pastured Pork and Robin and Brian from Lyons Creek Local. Since it’s our first year at the market, our booth has moved around from week to week—but it’s always nice to see friendly faces across the aisle.

When you shop at the market, you’re supporting a whole community of local farmers, ranchers, and food producers who care deeply about what they raise and grow.

Stop by and see us this Saturday from 8am–1pm for prairie-friendly beef, hot dogs, brats, and more. And while you’re there, be sure to visit our neighbors for some outstanding local pork, potatoes, and other farm-fresh goods.

Meet Ron Klataske, if you haven’t already.

Ron is Ryan’s dad, partner in our cattle operation, and the person most responsible for shaping our approach to ranching, conservation, and prairie stewardship.

This spring, after his old Ram truck gave out after a struggle to escape from deep, slick mud, Ron got a “new” pickup. By new, we mean used—but newer than the last one.

At 82 years old, Ron says the bigger tires, giant tailpipes, and upgraded turbo make him feel manly. We agree.

More importantly, he’s the kind of man who taught us that taking care of land, livestock, family, and community matters—and that cattle production and conservation can go hand in hand. Ancient Ocean Beef Co. wouldn’t be here without him.

To Ron, and to all the dads, grandpas, mentors, and father figures out there, we wish you a happy Father’s Day weekend.

To celebrate, we’re including a free pack of brats with the purchase of any two steaks. This weekend only.

Good news: GROUND BEEF IS BACK!

We’ll have plenty with us tomorrow at the Manhattan Farmers Market from 8am–1pm.

We’re also restocked with an entire animal’s worth of steaks, including ribeyes, KC strips, filets, sirloins, and some of our favorite specialty cuts: chuck eye, picanha, bavette, flank, flat iron, and skirt steaks.

If you’ve been waiting for ground beef, tomorrow’s a good day to stop by. As always, our cattle are raised on native tallgrass prairie in the Flint Hills, helping conserve one of Earth’s most endangered ecosystems while producing delicious, nutrient-dense beef for our community.

When our friends and longtime beef share customers lost power in the storm, we loaded up the coolers and headed over to help rescue their freezer full of beef.

It was the least we could do—but herds stick together.

We’re grateful for friends like Trevor and Stefanie, and honored that they choose our beef to feed their family.
