We’re back!

Come see us at the Manhattan Farmers Market this Saturday from 8am–1pm. We’ve restocked the freezers with healthy, delicious, prairie-friendly beef, so don’t wait too long—we’ll be set up this week next to our friends at Lyons Creek Local.

We’ll have an assortment of steaks, roasts, ribs, plenty of ground beef, cheddar dogs, and other cuts too.

We’ve sold out of almost everything until October, thanks to both new and longtime customers who care where their food comes from.

We’re taking a short break from the farmers market until then, but we’ll be back soon with more healthy, delicious beef raised right here in the Flint Hills, without added hormones or antibiotics.

Our beef doesn’t come from some anonymous supply chain. It comes from our family, from cattle raised on diverse native prairie, and from a ranch committed to conserving one of North America’s most endangered landscapes.

Our cattle live a good life on the prairie, and there are only so many of them. We’re grateful to share them with a community that values local food and supports local ranching.

It’s beef you can trust, from people you know.

Our beef comes from cattle born and raised on our family’s prairie ranchland, right here in the Flint Hills.

They spend their lives grazing diverse native pastures before eventually being processed at small-town, family-owned facilities. It’s beef that supports working grasslands, rural communities, and a stronger local food system from pasture to plate.

We’re currently accepting a limited number of reservations for fall 2026 beef shares.

A beef share is an investment in a whole animal and a simple way to keep your freezer stocked with healthy, delicious, and prairie-friendly beef at our best per-pound price. We’ve been gone fishing—and floating around Appalachian lakes—the past couple weeks, but we’ll be back at the Manhattan Farmers Market tomorrow.

One of our favorite parts of the Manhattan Farmers Market is the people—friends, customers, and fellow producers.

This season, we’ve been lucky to have great neighbors like Darrell from Parks Pastured Pork and Robin and Brian from Lyons Creek Local. Since it’s our first year at the market, our booth has moved around from week to week—but it’s always nice to see friendly faces across the aisle.

When you shop at the market, you’re supporting a whole community of local farmers, ranchers, and food producers who care deeply about what they raise and grow.

Stop by and see us this Saturday from 8am–1pm for prairie-friendly beef, hot dogs, brats, and more. And while you’re there, be sure to visit our neighbors for some outstanding local pork, potatoes, and other farm-fresh goods.

Impromptu steaks and soccer with friends at Piccalilli Farm.

These thick-cut ribeyes and KC strips were aged for 90 days, reverse-seared, and paired perfectly with a USA victory.

Sometimes the best meals aren’t the ones you’ve planned—they’re the ones that come together on warm summer evenings with friends.

As a kid, Ryan explored these hills with his father.

Today, they still enjoy this same prairie together, but now they get to share its wildlife and wide-open spaces with the next generation—often over slices of watermelon on warm summer evenings.

Meet Ron Klataske, if you haven’t already.

Ron is Ryan’s dad, partner in our cattle operation, and the person most responsible for shaping our approach to ranching, conservation, and prairie stewardship.

This spring, after his old Ram truck gave out after a struggle to escape from deep, slick mud, Ron got a “new” pickup. By new, we mean used—but newer than the last one.

At 82 years old, Ron says the bigger tires, giant tailpipes, and upgraded turbo make him feel manly. We agree.

More importantly, he’s the kind of man who taught us that taking care of land, livestock, family, and community matters—and that cattle production and conservation can go hand in hand. Ancient Ocean Beef Co. wouldn’t be here without him.

To Ron, and to all the dads, grandpas, mentors, and father figures out there, we wish you a happy Father’s Day weekend.
