Asian Noodle Salad in Peanut Dressing ππ₯β¨
π₯ A refreshing, crunchy, and ultra-creamy noodle salad tossed in a rich peanut-lime dressing with vibrant veggies and bold Asian flavors! Perfect for meal prep or a light, satisfying lunch ππΏ
Ingredients:
8 oz (225 g) rice noodles π
1 cup red cabbage, thinly sliced π₯¬
1 cup carrots, julienned π₯
1 red bell pepper, thinly sliced πΆοΈ
3 green onions, chopped
1/2 cup cucumber, sliced π₯
1/4 cup fresh cilantro, chopped πΏ
1/4 cup roasted peanuts, crushed π₯
2 tbsp sesame seeds
Peanut Dressing:
1/4 cup peanut butter π₯
2 tbsp soy sauce
1 tbsp lime juice π
1 tbsp rice vinegar
1 tbsp sesame oil
1 tbsp honey or maple syrup π―
1β2 cloves garlic, minced π§
2β3 tbsp warm water (to thin)
Optional: pinch of chili flakes πΆοΈ
Instructions:
Cook rice noodles according to package instructions, then drain and rinse under cold water βοΈ (8 minutes).
Prepare all vegetables by slicing, chopping, and setting aside in a large bowl π₯ (7 minutes).
In a small bowl, whisk together peanut butter, soy sauce, lime juice, rice vinegar, sesame oil, honey, garlic, and warm water until smooth and creamy π₯β¨ (4 minutes).
Toss cooled noodles with vegetables in a large mixing bowl π (2 minutes).
Pour peanut dressing over noodles and mix until everything is evenly coated π₯’ (3 minutes).
Sprinkle crushed peanuts, sesame seeds, and fresh cilantro on top πΏπ₯ (2 minutes).
Chill for 10 minutes before serving to enhance flavor infusion βοΈ (10 minutes).
