My favorite summer weekday pasta is this super easy pesto with ricotta pasta. All you have to do is cook the pasta, then toss it with room temperature pesto and ricotta cheese and you have a beautiful meal.

It’s definitely summer-inspired, but I do make this all year round. Have a great week, everybody!

If you love shrimp, garlic, spicy foods and all things tomato, you will love this shrimp fra diavolo. Like potato chips, you can’t eat just one! 😋🍤🌶️

My favorite Italian Summer Veggie Stew~Giambotta! 😋💚🤍❤️

My version includes eggplant, zucchini, yellow squash, tomatoes, peppers and potatoes simmered together with onions, garlic and lots of aromatic basil–an abbondanza of fresh flavors and textures!

Zucchini season is creeping up on me! I learned this stuffed zucchini recipe years ago on while on a culinary excursion in Italy and I’ve been making it ever since.

I’ll use whatever shape or size zucchini or even yellow squash that I have available. Here, I found some really adorable small, 8-ball zucchini at a local farm stand, so I used them.

Seriously so delicious!
