Asian Napa Cabbage Slaw

Slaw Ingredients

1 medium Napa cabbage, shredded (about 2 lbs)
1 cup shredded carrots
2 cups sugar snap peas, sliced thin
1 bunch green onions, sliced
1 cup roasted sunflower seeds
½ cup toasted sesame seeds (optional)

Sesame Ginger Dressing

½ cup rice vinegar
¼ cup soy sauce
¼ cup honey
¼ cup canola oil
2 tbsp toasted sesame oil
1 tbsp fresh ginger, grated
2 cloves garlic, minced
1 tbsp lime juice
1 tsp sriracha (optional)
½ tsp black pepper

Directions
In a large bowl combine Napa cabbage, carrots, peas, and green onions.

In a separate bowl whisk together rice vinegar, soy sauce, honey, canola oil, sesame oil, ginger, garlic, lime juice, sriracha, and pepper until smooth.

Pour dressing over the slaw and toss well to coat.
Refrigerate for at least 30 minutes before serving.

Just before serving, fold in sunflower seeds and sesame seeds to keep them crunchy.

Chef Greg Notes

For a sweeter slaw, add 2 tbsp white sugar

For extra crunch, add crispy chow mein noodles or wonton strips or toasted Ramen noodles

Pairs exceptionally well with pulled pork, grilled chicken, or grilled salmon.

ENJOY!!!

Here's a recipe shared from one of our CSA customers. We have green cabbage, bok choy or broccolini available which would all make an excellent slaw like this:

We made a great batch of coleslaw tonight!

1-small head of cabbage-shredded
3-green garlic-finely chopped
One bunch fresh dill-finely chopped
12-mini carrots-grated

Dressing
1/4 cup olive oil
1/2 cup vinegar-I used equal parts rice vinegar, apple cider vinegar and white balsamic vinegar
1/2 T Beau Monde seasoning
1/2 T pink salt

Shake dressing in mixing cup and pour over cabbage mixture, stir occasionally and refrigerate for 2-3 hours to let flavors meld.

Delicious, fresh and healthy!

We're trained up and officially part of the Ecdysis Foundation project AVALANCHE.

I really enjoyed getting to spend a couple hours training with staff that's here this week in Wisconsin.

When we get the heavy testing equipment to the farm we'll be testing a variety of water infiltration, soil and forage samples (including DNA analysis), insect and bird species and populations.

This is an awesome project aimed at training and enlisting the help of citizen scientists, (farmers) to continuously gather data around regenerative farming.

Come visit Ryan and Alaina this Tuesday at the Two Rivers Senior Center! Pick up some great, fresh veggies too ;)
