“That’s just a crocus.”

I see this comment all the time. 😊

Yes, saffron comes from a crocus flower… but not just ANY crocus.

There are over 90 species of crocus, and only ONE produces true saffron:

🌸 Crocus sativus 🌸

The purple crocus flowers you see blooming in spring at garden centers? Beautiful, but they won’t produce saffron.

Crocus sativus blooms in the fall and produces the three deep-red stigmas that are harvested as saffron—the world’s most expensive spice.

So when someone says, “It’s just a crocus,” that’s like saying all apples are the same variety.

Not all crocus are saffron.

Only Crocus sativus produces the spice worth thousands of dollars per pound.
