Someone asked why I have the cover picture above.

For those who do not know, this is amule or horse powered molasses mill.

J.A. Abner Simmons grew sorghum cane - the raw product used to make molasses. I know this from several sources who grew up in the community of Maple.

He would have probably had a mill similar to this one from the early 1900's

"Uncle Ab" would harvest the cane, then use the mill to squeeze the juice out of the cane.

The cane sap, would be caught in buckets and taken to a cooking pan, where it would be heated over a wood fire, while gently stirred to avoid foaming

This cooking process is used to remove excess water and concentrate the natural sugars of the cane sorghum.

Once cooked. acquiring a dark smokey color, Abner had transformed the cane juice into Sorghum molasses.

He would bottle the Molasses selling it or traded it for other goods.
