Last night, we were fully staffed with aces in their places.
And that gave us a rare luxury in the restaurant business—the chance to slow down just enough to listen and observe.
We watched a customer take that very first bite, close their eyes and nod.
We heard, “Oh my gosh, this is so good!” floating across the restaurant.
We watched a toddler become addicted to étouffée.
We heard, “This is the best thing I have ever eaten.”
We met people who drove from Bonifay, Blountstown, Dothan, Tallahassee and Panama City just to eat with us.
We met travelers from all over the world visiting our corner of earth.
We watched friends light up when they unexpectedly ran into each other.
Two elderly couples sat enjoying the evening while Dolly played in the background—laughing, talking and remembering experiences they have shared over the years.
And from the kitchen came the sound of laughter from our grill team.
These are the things you miss when you are running from table to table, answering phones, solving problems and just trying to keep up.
But last night, we got to notice.
A restaurant is about food, of course.
But it is also about experiences. Creating memories. The background to life.
Last night was a good reminder of what we are really building here.
