and I’ll share the again for those that missed it a week ago.
bring 4c salted water to a boil, whisk in 2c grits, cover the pot, bring temp down to low and whisk periodically until water evaporates. Whisk in 2c half and half or whole milk and 4tbsp butter. Cook covered on low for at least 30 additional minutes, salt & pepper & mild cheddar to taste. The longer you cook grits adding milk as needed, the creamer they become. sauté 2 diced shallots in 1tsp of butter, whisk in 2tsp creole seasoning, add seasoned shrimp to skillet w/ 3 chopped garlic cloves, 2tbsp butter. Sauté shrimp until opaque, then remove from skillet, set aside. Add sliced sausage to the skillet and sear for 2-3 mins on both sides, remove from skillet. Add 1/3c lemon juice and 1/3c white wine or chicken stock to the skillet and allow to simmer on med low for 10mins. Remove pan from heat, add shrimp and sausage back to the skillet. Dice cilantro and scallions for garnish. Pour grits into a bowl, spoon shrimp & sausage with sauce over the grits and garnish with herbs.
