Spoiler: Even though the garden is in rough shape, and I have very limited time to garden, it’s still worth it!

August Garden update! It has been so long since I’ve provided an update on what was going on in the garden. I’ve been busy with 1 million other things and because of that my garden has been terribly neglected. Add to that the ridiculous Georgia Summer heat and this garden is really in bad shape. Even still, I would say it’s worth it. Check out all of the tomatoes and peppers and butternut squash, as well as personal watermelons.

My garden is still producing in spite of neglect. If you’re a better gardener than me or have more time you could get even more out of this small space. But I hope that the empowering piece here is that you don’t have to dedicate a ton of time or have a huge space in order to have a garden that continues to produce for you all summer.

Working on a plan for my fall garden now and planning to plant: kale, radishes, beets, and maybe carrots, but I’ve had terrible luck with those in the past.

I often think to myself that we’ve made healthy eating far more complicated than it needs to be. With the growth of the wellness industry and health influencers, healthy lifestyles have become a commodity to be bought and sold. There’s a lot of money is selling hope and an easier way…and supplements! And where there’s money to be made, there are creative forces who want to separate you from your wallet. (Too cynical?)

The reality is that health eating is pretty simple and the evidence is overwhelming for what I’m about to tell you…

What’s cooking in my kitchen? This super filling vegetable hash with steamed eggs and spices! This isn’t shakshuka, but it’s inspired by that flavorful middle eastern dish!

One of the things I’m regularly telling my patients that they need to eat more at breakfast. Not only that, but it’s a great opportunity to eat vegetables. Most people don’t think of vegetables as breakfast food, but they can totally fit! You just have to be a little bit thoughtful, and maybe think outside the box. In this case, I sautéed a shallot, yellow squash, eggplant, cherry tomatoes, and finally chopped cabbage together, then added garlic and cumin, and Garam masala. Near the end, I made little depressions amongst the veg and added the eggs along with about a quarter of a cup of water. I covered the pan to allow the eggs to steam. This is breakfast for two days, supporting one of my other tips, which is cook once eat twice!

This could definitely be done in a more traditional shakshuka way, using mostly tomatoes, onions and peppers and lots of spices. Or you could use mushrooms and spinach with a sprinkle of feta. Get creative and use whatever vegetables you have on hand. Even frozen vegetables could work here.

At the end of the day, this concept becomes a flexible. plant forward way to eat your veggies. I enjoyed mine with an English muffin and decide a fresh cherries.❤️
