When someone told me how well fresh beets helped their complexion in THREE DAYS, I was determined to find a way prepare them.

When beets are roasted, they carmalize!

Gotta say, not a bad way to eat fresh beets.

Whew, I don’t think we quite recovered from last week’s Mother’s Day flower happenings.

But the flowers and veggies keep coming - no complaint there! The dahlias need staking, the tomatoes and cucumbers need trellising, the potatoes need hilling, and it’s a big weekend coming up!

We’re excited to celebrate a sweet couple this weekend!
