TURKEY POT PIE RECIPE

• 2 Cups Pre-Cooked Cubed Seasoned Turkey Breast
• Turkey or Chicken Broth
• 1 Box of Pillsbury Pie Crust (Refrigerated not Frozen)
• Kosher Salt (optional)
• 1.5 - 12 Ounce Jars of Turkey Gravy
• 2 - 8 Ounce Cans of Peas & Carrots (Drained)
• 1 Large Potato (Diced)
• 2 Sprigs of Celery (Diced)
• Flour

DIRECTIONS:
 Take Pie Crust out of refrigerator set on counter to reach room temperature.
 Dice up potato and celery and cook in Turkey Broth until tender. Remove from heat and drain. Place several paper towels on a plate and dump the cooked potato and celery onto paper towel to dry any excess moisture (Do Not Pat Dry). Allow it to cool.
 Take the pre-cooked cubed turkey and dust with flour so that all turkey cubes are coated with a thin coat of flour. This helps with excess moisture from the vegetables and allows for a thicker gravy.
 Open up the cans of the peas and carrots and drain.
 Place several paper towels on a plate and dump the 2 drained cans of the peas & carrots onto the paper towel to dry up any excess moisture. (Do Not Pat Dry)
 Combine all ingredients in a separate bowl and toss lightly with a little flour.
 Grease a pie tin and coat with flour.
 Place one of the 2 pie crusts onto the pie tin and press and form into the pie tin.
 Fill the pie crust with the turkey, pea, carrot, potato, and celery mixture.
 Use the back of a wooden spoon to make holes in the filling and pour the 1.5 jars of gravy onto the pie filling. Make sure to fully coat the top of the pie filling mixture and allow the gravy to seep into the filling.
 Place the 2nd of the 2 pie crusts on top of the pie and filling and seal edges.
 Use your fingers or fork on the edges to complete the sealing process.
 Cut 4 slits in the top of the pie crust for venting.
 Egg-Wash the top of the crust and sprinkle Kosher salt over the top. (Optional)
 Cook at 425 for approximately 1 hour or until crust is golden brown.

Here is some information on cooking a turkey. If your turkey is frozen, don't forget to take it out and put it in the refrigerator today or tomorrow!

Ingredients
• 1 (12–14 lb) turkey, thawed if frozen
• Butter (about 6 tablespoons)
• Chicken or turkey broth
• Seasonings: Salt, pepper, paprika, onion powder, garlic powder, dried parsley, and other herbs like thyme, rosemary, and sage
• Aromatics: Apples, Carrots, celery, onions, and/or citrus (like oranges or lemons)
Instructions
1. Prepare the turkey:
Thaw the turkey completely if frozen. Pat the turkey dry inside and out.
2. Season the turkey:
Mix butter with salt, pepper, garlic powder, onion powder, paprika, and other desired herbs. Carefully separate the skin from the breast and rub a generous amount of the herb butter mixture underneath the skin. Rub the rest of the mixture all over the outside of the turkey.
3. Add aromatics:
Place chopped Apples, carrots, celery, and onion, as well as halved citrus or herbs, inside the cavity.
4. Position for roasting:
Place the turkey, breast-side up, on a rack in a roasting pan. You can tie the legs together and tuck the wings under the body for a more compact shape.
5. Add liquid:
Pour about a cup of chicken broth around the turkey to keep the pan moist.
6. Roast:
Preheat the oven to 325−350∘𝐹
Roast the turkey, basting with pan juices every hour, for about 15 minutes per pound. If the skin starts to brown too quickly, loosely tent the turkey with foil.
7. Check for doneness:
The turkey is done when the internal temperature in the thickest part of the thigh and breast reaches 165∘𝐹.
8. Rest before carving:
Remove the turkey from the oven, cover it loosely with foil, and let it rest for at least 20–30 minutes before carving. This allows the juices to redistribute, ensuring a moist turkey.

Hope you have a happy Thanksgiving!
