BIG DOLLA PO' BOYS AND BBQ CHIPS

Did you know that if you mix a half cup mayonnaise with a little bit of milk, a little bit of sugar, a little bit of lemon juice and some salt and pepper you get coleslaw dressing? It's true!
And those measurements are entirely up to you based on how thick, how creamy, how sweet, tart or salty you like it!

Say goodbye to a boring sandwich and chips by a simple tweak. Top your po' boys with some coleslaw and side with some homemade chips that are covered in BBQ seasoning.

Why are they called po' boys? Because they're made with the cheapest cuts. Salami, pepperoni and ham. All thinly sliced and placed in layers. Big on flavor means less product has to be purchased. Top with coleslaw and cheese and you're ready to go!

KIDNEY PUNCH CASSEROLE

You don't have to have a lot of ingredients to make a beautiful meal. You just have to mix it up.

We had a handful of diced peppers, a couple potatoes, a half an onion that needed to be used up. So we added 1 can of spam and a can of kidney beans. VOILA! Kidney punch casserole!

Rinse those potatoes and cube them up. You don't need to peel them!
Cut the peppers up a little bit more and the onion should be cut up into smaller pieces as well.
In a large skillet add about a half cup of vegetable oil and turn heat to medium high.
While that's heating up, cut your spam into small cubes and then place that in the oil. Be careful! It's gonna be popping!
Add your peppers and onions.
Let that go for just a minute or two and then add the potatoes. Doing it in this order gives the meat a chance to sear a bit and get a tiny bit of crisp on it and the onions and peppers as well.
Add in your potatoes.
Season with Lawrys, Montreal steak seasoning or whatever you like.
Stir often, but not constant. Your potatoes need to make contact with that skillet in order to get that crispy browned edge.
Pour kidney beans into a microwave safe bowl and microwave about 3 minutes to heat through. You can cook them in your potato mixture but they're gonna fall apart in the hot oil. Your kitchen. Your call.
Once the potatoes are able to be pierced with a fork and they're nice and tender go ahead and drain your kidney beans and then add them to your mix.
Turn the heat off.
Give it a good stir and serve!

Don't go hungry. If you need help with food please let me know. I'll put you in touch with resources that can help you! And don't ever be ashamed to ask for help. There's never a reason to be ashamed when you're trying to feed your family.

HAMBURGER STEW

Do you guys have to be in a mood for certain foods? What mood is a soup mood? I've noticed more and more for me it's days where I'm feeling a little down or a little under the weather, but not really like myself. I need a little comfort kind of food that will make the inside feel better than it does. Ya know? And this one was my mother's favorite soup (aside, of course, from zuppa).

This has been featured before but it's been awhile. My "sister from another mister" has not been feeling well. Personally I think she takes on too much stress and I remind her she's no spring chicken anymore so those late nights out drinking and partying gotta stop! Totally kidding. She doesn't do any of that mess. But she does stress and I worry about that. And since soup usually makes my stomach feel better, we're going to hope it helps her too.

2lbs ground beef
1 bag of frozen mixed vegetables
4 diced potatoes
1 12oz can tomato paste
1 can diced tomatoes IF YOU LIKE THEM
onion powder
Garlic powder
Lawrys seasoned salt
Pepper

In a large stew pot
Brown the ground beef and drain.
Add in tomato paste and 4 cups water.
Stir to disperse the tomato paste.
Add in your tomatoes if you choose to use tomatoes.
Add in your vegetables and your seasonings.
Let simmer for 30 minutes so the flavors mingle.

I hope you feel better sister!!

OVERSTUFFED MEATBALL SUBS

Ever have a meatball sub that made it to leftovers because it was just so much food you couldn't finish?? This may be the one!

Meatballs seared in bacon grease and then simmered in marinara sauce are then place on a bun lined with Capocolla, Peppered Salami and Calabrese. They get tucked in tight with tri color peppers, red onions and then topped off with Monterey jack and cheddar cheese.

Pair that up with some home cut potato chips and Cowboy beans and you're looking at a meal fit for family of all kinds!

The best part? You don't have to make these into SUBS! Fry your potato chips and build Nachos with these! You might cut your meatballs in half for ease and then layer on the cowboy beans. Dice up your Salami add some fried pepperonis and dice up your peppers and onions to go over the top! Top off with cheese and you are all set!

Same ingredients served two ways!

TURKEY & FRIED RICE QUESADILLAS

And this is our SEVENTH meal this week in our Harter House Strafford challenge of seven meals for four people for $60. We've eaten pretty great this week and, even though there's been quite a bit of rice used, it doesn't take on the same flavor because of the other things we've mixed with it. Like tonight...

I bet you didn't know leftover fried rice would be good in Mexican foods!

No sense wasting anything because food is money and you've certainly worked hard for that. Every penny counts more these days than ever before. Cutting your spending where you can without sacrificing your flavors is certainly ideal. So cut a few more pennies by making your own tortillas.

3 cups all-purpose flour
1 teaspoon kosher salt I use Morton's
1 teaspoon baking powder
⅓ cup extra virgin olive oil, vegetable oil or other fairly neutral flavored oil
1 cup warm water

Combine flour, salt and baking powder in a medium-size bowl. Using a sturdy silicone spatuala or a sturdy wooden spoon, mix dry ingredients until well combined.

Make a well in the center of the dry ingredients and add the oil and water. Stir well from the bottom up, until all dry ingredients are incorporated and the dough begins to come together and form a shaggy ball.

Turn dough out onto a lightly floured work surface and knead for 1-2 minutes until the dough is nice and smooth. Rest about 10 minutes.

After the rest period, heat a large pan over medium heat. Roll each dough piece into a rough circle, about 6-7 inches in diameter, keep work surface and rolling pin lightly floured. Don’t stack uncooked tortillas on top of each other or they will stick together. (I like to separate my tortillas with parchement paper.)

When the pan is hot, place one dough circle into the pan and allow to cook 45 seconds to 1 minute or until the bottom surface has a few pale brown spots and the uncooked surface is bubbly. If browning too fast, reduce the heat a bit. If it’s taking longer than a minute to see a few pale golden brown spots on the underside of tortillas, increase the heat a bit. Flip to other side and cook for 15-20 seconds. The tortillas should be nice and soft but have a few small brown spots on the surface.

After you get your tortillas together, in a large skillet or Dutch oven add olive oil and some diced onion and diced tomatoes. Peppers are great if you have them. Not necessary, but nice.
Add your ground turkey.
Add your taco seasoning when the turkey has browned up.
Add a cup of water and 2 cups of your fried rice. Now I removed some of the veggies that was in our fried rice because I wasn't sure how the Marines would react to finding green beans in their quesadillas, but you don't have to.
Let your flavor simmer together a few minutes so that rice can heat through.

In a separate skillet, spray with nonstick spray or a very little bit of olive oil and turn heat to medium.
Place a tortilla down, Sprinkle some cheese over it and add a scoop of your turkey fried rice combo. Top with a bit more cheese and another tortilla to tuck it in.
After a minute or so, flip your quesadilla over. Repeat until the cheese has melted and glued your tortillas together.
Remove from heat, cut into quarters and serve with sour cream!

Holy cow these are ridiculous!

No waste and new taste!

CHICKEN, BROCCOLI & CHEESEY RICE

This is meal SIX of our Harter House Strafford challenge of seven meals for 4 people for $60!

Anyone else flooded out today? 🙋‍♀️🙋‍♀️🙋‍♀️ Don't get me wrong. I enjoy a nice rainy day. But this??? Oiy!!

Those remaining leg quarters (should be 4) are going to take on a whole new life here. I actually put them in the oven at 400° for a good 30 minutes until they were cooked through. Once they were all set, I stripped the meat and set it aside.

Rinse that rice 3 times until the water is clear. Drizzle some olive oil in a large skillet or Dutch oven over medium high heat. If you have an onion, dice it up and toss that in there. Just makes it tastier. Same with some peppers. If you have them on hand, dice them up and toss them in there. If you don't have them don't worry about it. It's just extra stuff, not mandatory.

Once the peppers and onions start to soften and even brown a bit on the edges, add your rice. Turn the rice over and over so it gets evenly exposed to the oil and the heat. Do this just a minute or two and then add a half cup of water so it steams up the rice and deglazes the pan. Once the water absorbs, add another half cup. Stir through and let that water absorb then add 2 cups of water for the cup of rice. Add in a bouillon cube as well if you have it. If you don't, don't worry. It's still flavorful!
Once you've added the 2 cups of water and stirred the rice, cut up your broccoli into florets and add them as well. Add in your shredded chicken as well!
Don't stir it, just leave it to rest on top of the rice. It will steam it as it cooks the rice.
Cover with the lid and let simmer over medium low heat for about 10 minutes. Let that water absorb and stir.
Top with shredded cheese and you're ready to roll!

Talk about an excellent end to a rainy couple days!

BBQ PINEAPPLE CHICKEN & FRIED RICE

This is meal HIGH FIVE of our Harter House Strafford challenge of six meals for four people for $60 and lemme just tell y'all, you need to get ready to be full as a Thanksgiving float in the Macy parade!

Grab 4 of those leg quarters and make sure there's no stray pin feathers on them.
Place in your baking pan and preheat the oven to 400°.
Season with salt and pepper.
Bake for 15 minutes. Remove and brush on your first coat of BBQ sauce.
Bake another five minutes.
Turn the quarters over and brush on more sauce.
Bake another 5 minutes.
Turn the quarters over and brush on more sauce.
Bake another 5 minutes.
Cut up your pineapple and remove the center core.
Place slices of pineapple between the leg quarters.
Brush on more BBQ sauce.
Bake another 10 minutes.

Prepare fried rice!
I rinsed the rice 3 times.
In a large skillet I drizzled acouple Tablespoons olive oil and tossed in some diced onion, minced garlic and a little salt and pepper.
Once the onion is translucent and fragrant I added the rice. (One cup)
Stir it about and spread it out as much as you can. Stir at about a minute. Spread out again. Stir at about a minute and spread out again.
Add a half cup of water. This will steam your rice. Stir it around and when that water dissipates, add another half cup and repeat the process.
Once that half cup dissipates, add a full cup of water.
Wait a minute and add another cup of water.
Add your mixed vegetables.
Add bouillon if you have it.
Cover with a lid. Simmer for about 10 minutes.

Prepare to devour and nap because this is so delicious! And I didn't know how I would feel about the Always Save brand of BBQ sauce but it worked just great!

AMERICAN GOULASH

Meal 4 of our Harter House Strafford challenge of seven meals for four puerile for $60 is a meal we've used the entirety of my life as a standby to make the dollar stretch; American Goulash.

Those beautiful tomatoes made this perfect! Wash those tomatoes and get the core out. Cut them into 4 pieces. You don't have to dice them because you're going to cook them up and this way makes it so much simpler.
In a Dutch oven let's put a drizzle of olive oil. I had some pre-made mirepoix frozen so I set it in the oil. It didn't take long to spring that to life.
Once it started to simmer quickly, I added the tomatoes.
The beef we split with the Ravioli we're going to add to this as well.
Add 3 cups of water to your mix and I added some tomato bouillon to this as well.
Add your half box of penne pasta.
Cover with a lid and let simmer for 10 minutes.
Test pasta to check firmness.
I also added some seasonings as well that I had on hand.
Get ready to dig in!

Dinner doesn't have to be complicated to be good and filling.

RAVIOLI & MEAT SAUCE

This is meal 3 of our Harter House Strafford challenge of seven meals for four people for $60!

Score big in the easy and fast meal department!

Brown your ground beef. I know we got a fairly large package of ground beef so I just prepared it all and then separated it out.
In a separate pan bring 6 cups of salted water to boil. Let your Ravioli roll in a slow boil for about 5 minutes while your beef is browning.
Once the beef is done, split in half and the half that goes into the other dish will go in the refrigerator while you add pasta sauce to the remaining half still in your skillet.
Turn your heat down and cover with a lid. Stir to disperse the sauce.
(Fresh made bolognese sauce is always so great, but for budget meals, this works as well!)
Using a slotted spoon, your Ravioli are done when they float so scoop them out and then cover with your meat sauce.

Devour quickly before the Marines find them! 🤣🤣🤣

Brown up one pound of your ground turkey. Add taco seasoning (I had that on hand already as always) and 1 cup of water. Let simmer over low heat.

In a sauce pan bring 3 cups of salted water to boil and add your package of gnocchi. When the gnocchi floats, remove it and put it in the turkey mixture. Repeat until you've got it all out and then you can be done with the pan of water.

Dice up one tomato and add to your turkey and gnocchi. Stir to coat in the taco seasoning. Simmer about 5 minutes and prepare to serve.

Shred up some cheese for the top of your turkey taco gnocchi!

It can be a fast meal without being fast food! And look at all that flavor!

CHICKEN & BEAN STEW

First up in our Harter House Strafford challenge of 7 meals for 4 people for $60 is this delicious and basic stew.

That 15 bean mix was so different to use in this because my brain kept thinking ham and beans style while my taste buds were all about that chicken that just soaked up all the flavors. I know the bag said 16 beans, but I hate lima beans so I picked them out. 🤣

Easy peasy to load everything. Including 3 leg quarters, into the Crockpot and cover with water. I added a couple of those new potatoes as well and sliced them into quartered pieces. I tossed in a couple bay leaves and seasoned with a little bit of onion powder and bouillon because we have it on hand.

Set the Crockpot to low for 8 hours and you're ready to remove the leg quarters and pull off the meat. Return the meat to the Crockpot and discard the bones.

You can stop there and serve it up or my crew likes a thicker stew style so I'll mix 2TBSP of cornstarch in 4 oz of water and add to the soup. That will thicken it up slightly without losing any flavor.

Now how delicious does that look!

Y'all wash your hands and get here to eat!

REDNECK RICE

Who says you can't feed a family of 4 on $4? To that we say REDNECK RICE!

Dollar Tree was our meal challenge today. We picked up a really great bag of frozen vegetables and some sausage links with rice for under $4!

In a skillet brown your sliced sausage links.
Remove from the pan and set aside for now.
Go ahead and open that bag of frozen veggies and cut up any of the significantly large pieces. I actually hoped there was a Santa Fe mix, but no dice so go with what you got. This turned out pretty good though!
Once chopped up, add to your skillet.
Give them a good couple turns while you rinse 2 cups of your rice 3 times so the water turns clear.
Push a nice big hole in the middle of your veggies and drizzle up some olive oil. Not a lot, just enough to give a nice glaze to the rice and help it release that flavor.
Add onion powder, garlic powder, salt and pepper as you will. I keep bouillon on hand always so I tossed in two small cubes as well.
Slowly add in 4 cups of water. What I mean by this is to add in a half cup stir it all around. Add in another half cup and stir it all around.
Add in a full cup and stir. Then another and stir and then the last one and stir.
You may need one more half cup of water depending on your heat and absorbing of the rice. No big deal either way.
After bringing the water to a boil, lower the heat to medium low and cover it with a lid.
After it's ready, toss in your sausage coins again and stir it all together.

To quote my husband. "It's like Jambalaya and fried rice had a baby."

SHRIMP FAJITAS

I am allergic to shrimp but wowzer I sure do like the way it presents itself in dishes!!

Fajita Marinade Ingredients:
1/4 cup olive oil
4 cloves garlic, minced
1 Tbsp lime juice, from 1/2 lime
1 Tbsp cajun spice
1/2 tsp salt

Shrimp Fajita Ingredients:
3 lb large shrimp, peeled, deveined
4 bell peppers, (any color) sliced
1 medium onion, sliced
1/4 cup cilantro, chopped
4 tsp lime juice , (from 1/2 lime)

In a small bowl, combine marinade ingredients: 1/4 cup olive oil, 4 cloves garlic, minced, 1 Tbsp lime juice (from 1/2 lime), 1 Tbsp cajun spice, 1/2 tsp salt.
Slice bell peppers, and onions the same 1/3” thickness and place vegetables in a medium bowl. Pour half of the marinade over the top then toss to combine.
In a second medium bowl add shrimp and add remaining half of the marinade and stir to combine. Leave sit for about a half hour.
Heat a large skillet over medium heat with 1/2 Tbsp oil and when hot, add shrimp in a single layer and sautee 1-2 minutes per side or just until cooked through and no longer translucent then remove from the pan into a bowl for the time being.
In the same pan, add marinated vegetables and saute until soft and golden brown at the edges (10 min), stirring occasionally, then turn off the heat.
Add shrimp back to the pan along with 1/4 cup chopped cilantro. Squeeze fresh lime juice to taste over the mixture and toss to combine.
Be kinda careful with the lime juice unless you're sure you enjoy it as a little goes a long way! You don't want to give your taste buds a shock with lime flavored everything where you can't taste the other flavors. A meal is a party of flavors that mingle not an assault on your face.

BACON CHEESEBURGER WITH 3 CHEESES AND GRILLED ONIONS

Whomever said playing with your food was against the rules obviously never got to play with their own food!

Double layer beef mixed with Worcestershire sauce and Montreal steak seasoning, smashed down where we got 10 full sized burgers from 3 pounds of beef.
The tip with smash burgers is the higher the fat count in your beef, the wider you need to flatten them out. We flattened these out to the size of a regular dinner plate and they shrank down to cover up a piece of toast. And that's on an 80/20 beef.

Crispy bacon.
If you fold your bacon strips into a V pattern and fry them that way, they will sit on your bread perfectly when you lay them side by side inverted from each other.

3 cheeses melt perfectly in the skillet and then lay your piece of toast on top and scoop it out or just let them melt between your stacked beef patties.

Grilled onions. Slice those bad boys thin so they take less time to fry up! You can get to eating faster!!

Start stacking and attacking!!

PARMESAN CHICKEN ORZO & MUSHROOMS

This one is a wee bit more labor intensive, but if you enjoy being in the kitchen then this one should be right up your alley.

Shredded chicken
1 cups orzo
1/2 stick butter
8 ounces parmesan shredded (put 6 in the skillet and the last bit to garnish the top)
EVOO
3 cups chicken broth
1/2 cup heavy cream
Diced parsley
Garlic slices or minced (your call. We like garlic so I used sliced)
sliced mushrooms (the amount is up to you as they go all over the top or feel free to not include them at all)

I actually took an additional step and used a mirepoix mix to boil 3 chicken breasts for 15 minutes before I shredded them up. I drained the broth and put it to the side for the orzo.
You can totally use Boxed broth and a rotisserie chicken if you like, I just had the extra time to do my own.

In a large skillet over medium heat melt your half stick of butter with 3TBSP EVOO.
Add your garlic.
Stir about to get that garlic to release that fragrance.
Add your orzo.
Stir frequently. Toasted not browned is what you're looking for. Toasted orzo takes on a slightly nutty flavor that really makes this dish more earth and woods than refined and uptown. I suppose you could say it's excellent for when you're missing home, even if you're already home.
Give that about 3 or 4 minutes and add in your chicken broth and stir.
Add in your shredded chicken.
Let that cook down about 10 minutes.
Add your parmesan and heavy cream.
Stir about to combine thoroughly.
Add your parsley and stir to disperse.
Turn off your heat and let it rest.

In a separate pan over medium high heat, add a drizzle of EVOO and in a flat layer lay your mushrooms slices. Let each side brown.
Remove and lay on a paper towel to drain off any excess oil.
You may have to do a couple batches depending on the size of your skillet. It doesn't take long so don't panic about it.
Just add to the top of your dish as you will!
Top with some parmesan if you like!

Sure is pretty!!

Y'all get on in there and eat!
Go ahead and get started without me.
I made a whole pan for ya!

CHICKEN POT PIE

Holy cow y'all I forgot to post this one!

Meal SIX Of our Walmart Marshfield - State Hwy #38 challenge is six meals for 4 people for $35!

Talk about saving the best for last!

Easy peasy as well as beautiful and soooo filling!

In a Dutch oven add a drizzle of olive oil with 2 diced carrots, 1/2 diced onion, 2 celery ribs and salt and pepper.
Once they've bloomed and become fragrant and slightly soft, add the rest of that chicken and cover it with water.
Let it simmer for about 30 minutes.
If you have bouillon by all means add one or two cubes . It only boosts the flavor.
Pull the chicken from the water. Pull the meat from the bones and cut up the meat. Return the meat to the broth.
Add your frozen veggies.
Add a couple diced potatoes if you have them.
Simmer about 10 minutes.
Add cream of chicken soup.
Stir to combine.
Turn heat off.

For the pie topping you can use a homemade biscuit recipe of your choice or even a pie crust recipe like this one:

2 1/2 cups all-purpose flour, plus more to dust
1/2 Tbsp granulated sugar
1/2 tsp sea salt
1/2 lb COLD unsalted butter, (2 sticks) diced into 1/4" pieces
7 Tbsp ice water, (7 to 8 Tbsp)

Place flour, sugar and salt into the bowl of a food processor and pulse a few times to combine.
Add cold diced butter and pulse the mixture until coarse crumbs form with some pea-sized pieces then stop mixing. Mixture should remain dry and powdery.
Add 7 Tbsp ice water and pulse just until moist clumps or small balls form. Press a piece of dough between your finger tips and if the dough sticks together, you have added enough water. If not, add more water a teaspoon full at a time. Be careful not to add too much water or the dough will be sticky and difficult to roll out.
Transfer dough to a clean work surface, and gather dough together into a ball (it should not be smooth and DO NOT knead the dough). Divide dough in half and flatten to form 2 disks. Cover with plastic wrap and refrigerate 1 hour before using in recipes that call for pie crust.
Transfer dough to a clean work surface, and gather dough together into a ball (it should not be smooth and DO NOT knead the dough). Divide dough in half and flatten to form 2 disks. Cover with plastic wrap and refrigerate 1 hour before using in recipes that call for pie crust.

****if you don't have a pie plate don't panic. Use a 9x13 cake pan and pour all your chicken pot pie filling into it and then top with the pie crust recipe above. *****

Bake at 400 for 20 minutes or until golden brown!

FRIED CHICKEN SAMMIES

This is meal 4 in our Walmart Marshfield - State Hwy #38 challenge of six meals for four people for $35.

We were supposed to make chicken parm sandwiches today, but I forgot about this little bag of cabbage mix in the fridge and I didn't want it to go to waste, so here we go!

Pound out the chicken breast and tenders from your whole bird. You should be able to get between 5 and 6 nice sized chicken patties.
The easiest way to do all this is to section out the chicken breast and pound each piece out. You can actually add additive chicken to this if you need to while pounding it out and shaping it to a somewhat rounded shape.
Once that's complete, place each one on a piece of waxed paper and freeze until slightly stiff. This makes coating them easier.
Dredge in flour and then egg and then flour a second time.
Fry each side 3 to 4 minutes in hot oil until golden brown and crispy on the outside.
Serve on that French bread we bought. Take it up a step by turning the French bread into parmesan toasts and use that for your sammies.
We put the coleslaw on our sammies for a more toasts southern flair!

Come on y'all, let's eat!

SAUSAGE AND BEAN SOUP

Meal three of our Walmart Marshfield - State Hwy #38 challenge of six meals for four people under $35 is this delicious bean soup!

And guess what?? I used the instant pot!

Wash and rinse those beans.
Add in 6 cups of water.
Add 2 bouillon cubes (the large cubes)
Add in 1 small onion.
Add in 2 carrots washed, peeled and cut
Add in 2 celery ribs washed and left whole so you can pull it out later with ease.
Add in pepper and salt to taste (about a half teaspoon of each)
1 garlic clove if you like!
Close up the instant pot and let that go for an hour on high pressure.
Once the beans are done slice up your sausage links and give them a good sear on the skillet so they can provide the flavor without getting overly soft in the soup.

Add in your sausage coins and dig in!

The flavor that these beans collected from the carrots, celery and onion was phenomenal!
I gotta say I might just be in love with the instant pot! Fresh bean soup in an hour is amazing!

Y'all get on over here and eat!
