Did you know for about $25 you can make 24 sausage, egg and cheese biscuits at home? Just pop them in the microwave and you're ready to take on the day!

I struggled for a long time trying to figure out the best way to make these and I cannot begin to describe how AMAZING the 6 cavity silicone egg mold has been! They for the biscuit perfectly and, using all 4 molds, I can bake 24 egg patties just like that!

Bake biscuits per the can instructions. Don't over bake because when you microwave them they will become hard.

Beat 18 eggs with a cup of milk. Fill each mold cavity about ¾ of the way and that will be perfect. Bake on 350° for 20 minutes and they will be perfect!

Sausage patties you don't even have to cook as they are already cooked and flash frozen.

Cheese we will cut in half. A half piece of cheese per biscuit is plenty unless you're a cheese lover in which case you'll need to get a larger package of cheese slices.

Cut the biscuits open and lay a sausage patty on the bottom half. Top that with an egg patty. Then add on your cheese and the biscuit top.

Wrap with Saran wrap and place them in gallon ziplock bags for storage and then place them in the freezer!

Microwave each for about 90 seconds in a damp paper towel or, and this is a new thing, place on a paper plate and spritz with a tiny bit of water then cover with a microwave safe bowl and microwave 90 seconds. This creates steam and keeps the biscuit soft.

I make these at least once a month as that handsome mister I'm married to enjoys them before work. Save even more money by making homemade biscuits if you'd like!

On June 19th I posted the most recent challenge for groceries. What I didn't know is the challenge that life was about to put us up against next! Sticking to a plan isn't always a feasible option. You need to know that as an adult and providing for your family. You also need to know that it's going to be okay. Taking minor steps to breathe in and out, not lose your focus or your cool will help you keep in the vicinity of a good budget without completely destroying your finances.
So, what happened?
Well, we've made two out of town trips this past week alone. We're going to be making two more coming up. And, when I say we, I mean that handsome wee beastie I'm married to because I'll be here with the heathens. Family comes first above all and always and ours needed us. Speaking of which, could you please send out a few prayers to a beloved aunt that's currently on life support due to respiratory arrest? We would greatly appreciate it.
As for the challenge, sadly we let a few ingredients go to waste as I didn't catch the bell peppers or tomatoes in time to save them and our bags of salad and slaw was totally trashed. THANKFULLY a good friend was so kind as to send a few tomatoes my way and a HUGE head of cabbage so I'll be able to use those in place of the others.
But that's life, guys. And it happens!
The important thing is not to lose it and let depression lie to you and tell you it's because you did something all wrong. You didn't. What happens is that your plan was rewritten by a bigger plan and we just gotta take a look at what's left of our ingredients and move on from there.
That said, we've got just over two weeks and we've used several things already, but we've got to use what's left. So let's see what's left!

1 ham steak

sausage rope
tuna

So, this is the new plan for the next two weeks with some exceptions! We have a charming visitor this week as we did last week and she's kind of a picky eater. Of course when you're adorable, super sassy and a grandbaby, you can be all that way! I don't get to see them often in person so I spoil them up heavily so they will miss Gran's cookies when they go back home :D

We're going to have:
Hamburger steaks with potatoes
Pork Chops
Smoked Sausage with Broccoli Cheesey Rice
Fish fillets
Egg Salads
Turkey Spaghetti Pie
Ham and beans
Chili
Bar Fries
Burritos with Pintos and Cheese
Teriyaki Legs and Rice
Tuna Casserole
Breakfast
Chicken Spaghetti
Cheater Enchiladas
Fish Tacos

That should take us through to the end! Keep in mind that we're probably going to miss one or two meals in there because of the trips to take. But, hopefully, things will go smoothly and we're going to get through this all without a hitch!

EGGROLL IN A BOWL

1 tablespoon sesame oil
1 pound sausage links crumbled
1 tablespoon soy sauce
1 garlic clove, minced
1 teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon ground turmeric
1/4 teaspoon pepper
1 good sized packet coleslaw mix
1 cup cooked rice
3 green onions, thinly sliced
2 eggs scrambled just for extra flavor if you would like

1. In a large cast-iron or other heavy skillet, heat oil over medium-high heat; cook and crumble sausage until browned, 4-6 minutes. Stir in soy sauce, garlic and seasonings. Add coleslaw mix; cook until vegetables are tender, stirring occasionally, 4-6 minutes longer.

2. Cook rice according to package and then immediately add to sausage mixture, tossing to combine. I cracked and scrambled a couple eggs as well just to add flavor. Sprinkle with green onions. If desired, serve with additional soy sauce.

CHICKEN AND BACON STUFFED POTATOES

4 chicken legs
4 strips bacon, cooked and diced
Diced green onions
4 small potatoes or 2 large
Butter to taste

This might not seem like a filling meal at first glance but it will totally fill you up.
I roasted the chicken legs in the oven for an hour on 400°.
While they were roasting, fry the bacon until crispy. Drain on paper towels and then diced up.
Rinse your potatoes really well and give them a good scrub. Poke a couple holes in them and microwave 7 minutes. If they're not soft and able to be squeezed, roll your potatoes over and microwave another 2 minutes and try again. They should squeeze easily, but not squishy. Think stress ball firm where it will give a little bit not go through.
Chop up a couple green onions.

Now put it together!
Cut open your potatoes and add butter. Dollop as you like!
Strip the meat from the legs. Scatter about your potatoes.
Add your diced bacon.
Top with shredded cheese and green onions.

SHREDDED PORK RAMEN

2pkgs Ramen
1 cup frozen vegetables
1lbs pork loin
2 eggs
Diced green onions
Soy sauce

That instant pot is seriously a game changer for this one. Drop a pound of porkloin in there with 2 cups water and your choice of seasoning. We just used a little salt and pepper on this round since it was going on Ramen. Cook for 1.5 hours so that it just falls apart.

When the pork is done, set a pit of 4 cups water on the stove to boil. Add in your cup of frozen veggies and let that go about 5 minutes. Add in your Ramen and let that cook about 4 minutes more. I like to add the spice packets after I cook the noodles so the spice is more pronounced.

In a small skillet fry up an egg.

Now it's just assembly!

Pull the noodles and veggies from the water and place in a bowl. Top with your porkloin and top with an egg and green onions. Pour in some soy sauce to taste and enjoy!

I know a lot of folks use spam, but shredded porkloin adds a whole new flavor to this tasty feast!

CHICKEN LOMEIN

4 thighs deboned and cubed
4oz fettuccini noodles, halved
Half bag frozen stir fry veggies
Soy sauce
Sesame seeds if ya got em

Talk about easy!
Boil noodles in salty water
In a large skillet drizzle olive oil and add your chicken over medium high heat.
Stir it around so it browns lightly all over.
When cooked through, remove chicken and set aside.
Add frozen veggies to that skillet. You might add a drizzle more of olive oil. Make sure that skillet is hot!
Move those veggies around so they get all kinds of contact heat.
And then add a half cup of your pasta water to the veggies and cover with a lid so they steam up.
Once the liquid has been dispersed, stir the veggies and add another half cup of the pasta water and repeat the process.
Your veggies should be crisp and tender and cooked through.
Add your chicken back to the skillet with the veggies and toss in some drained, cooked Fettuccini noodles.
Add 1/4 cup soy sauce if you got it. If you don't, then just add in another half cup of that pasta water and toss in some of your favorite Sriracha sauce to bring in that flavor. Sprinkle on some sesame seeds too!

TACO TURKEY PASTA

1lbs ground turkey
8 ounces dry penne
2 cups shredded cheese
¼cup butter
2 cups milk
¼cup flour
Taco seasoning (see photo for recipe)

Bring 8 ounces of penne to boil for 10 minutes in salty water.
Brown your ground turkey.
Add taco season as you like.
Add in your butter and flour.
Stir to combine.
Add in the milk and stir to let the milk absorb the flour.
Add cheese and stir.
Drain pasta and add to your Cheesy mixture.
Top with red pepper flakes.

HAM & CHEESE SLIDERS WITH CHIPS

Let's start off this challenge with the easy one because it's so ridiculously hot outside that nobody wants to stand over the stove for an hour.

Ham and cheese sliders are fast, easy and filling! Just 3 slices of the ham on each one with a half slice of Swiss cheese and that's about it for the assembly.

Brush the top and bottom with a little bit of butter or mustard if you want it tangy and toast them in a skillet over medium heat until the cheese is melted and the roll is toasted.

Those chips might look store bought, but just 2 potatoes produces enough chips to stuff your belly full! Slice them thin or wavy and fry in your air fryer or even deep fry in oil.

And then get out of that kitchen and go watch that sunset!

We made six of the sliders using only half the package of ham lunch meat and half the package of rolls. So we're going to wrap up the rolls and stick those in the freezer to save them for another meal. The ham and cheese will stay good in the fridge for at least another week.

These might not sound filling, but I cab absolutely assure you that they are! We fixed 6 and only ate 4. The other 2 will be heading out the door for that hubby's lunch tomorrow. We were STUFFED!
