It's been a while since we took a look behind the scenes at the bakery.
One of the unexpected challenges of baking is that finding the right ingredient - which can sometimes take longer than making the pastry itself. π€
Croissants are already a four-day labor of love, so I occasionally use prepared fillings for our croissant tarts. But when I recently went looking for cherry and strawberry rhubarb fillings, I discovered that many contain Red #40. π¨
Because we try to use ingredients that are as natural as possible, those fillings didn't make the cut.
We may not make every component from scratch, but we do our best to be thoughtful about every ingredient that goes into our pastries. ππ₯
