Hillside Family Farm About Hillside Family Farm Hillside Family Farm is a single family farm recently relocated to the Marston NC area.

We strive to focus on self sufficiency, growing several gardens and crops a year. On our small farm we also raise hogs, goats, chickens, ducks, cats and of course a goo ol’ couple of farm dogs. Bentley is a Great Pyranise and protects the goats from predators and “Dog” is our yard dog and companion. We currently offer farm fresh eggs along with hand made gifts and decor. We are working towards acquiring a meat license so that we can offer freshly frozen ground sausage.

Pecan Caramel Cheesecake Recipe 🍰🍯
Ingredients:
For the Crust:

1 1/2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
1/4 cup brown sugar
1 teaspoon cinnamon (optional)
For the Cheesecake Filling:

16 oz cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
1/2 cup sour cream
1/4 cup heavy cream
For the Caramel Topping:

1 cup caramel sauce (store-bought or homemade)
1/2 cup pecans, chopped (plus extra for garnish)
Directions:
Prepare the Crust:

Preheat your oven to 325°F (160°C).
In a mixing bowl, combine the graham cracker crumbs, melted butter, brown sugar, and cinnamon (if using). Mix until well combined.
Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake for 8-10 minutes until set, then remove from the oven and let cool.
Make the Cheesecake Filling:

In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
Gradually add the granulated sugar and continue to beat until combined.
Add the vanilla extract, then mix in the eggs one at a time, ensuring each is fully incorporated.
Stir in the sour cream and heavy cream until smooth.
Assemble the Cheesecake:

Pour half of the cheesecake filling over the cooled crust.
Drizzle half of the caramel sauce over the filling and sprinkle with half of the chopped pecans.
Pour the remaining cheesecake filling on top and gently spread it out.
Finish by drizzling the remaining caramel sauce over the top and sprinkle the remaining pecans.
Bake:

Place the cheesecake in the preheated oven and bake for 50-60 minutes, or until the center is set but still slightly jiggly.
Turn off the oven and crack the door, letting the cheesecake cool in the oven for about 1 hour to prevent cracking.
Chill:

Remove the cheesecake from the oven and let it cool to room temperature.
Cover and refrigerate for at least 4 hours or overnight for best results.
Serve:

Before serving, drizzle additional caramel sauce over the top if desired and garnish with extra pecans.
